COMMERCIAL DESCRIPTION
Brassée à partir de malts de type pils allemand et munich foncé, une bonne dose d’épeautre bio apporte à cette bière son incomparable douceur. Un ajout généreux de houblon lui confère une belle amertume et un arôme herbacé en harmonie avec son caractère fruité, épicé et typiquement belge.

Copper blonde with a small off-whitehead leaving a nice lace. Nice spiciness on the nose accompanied by a classic rustic saison-style aromas and hints of sourness. Light to medium body, palate is dominated by the graininess of the spelt ending on the spicyness. Finale is rustic grain and pepper. Well-made and interesting saison.

Bottle. Dark opque orange with a rocky off white head that recedes quickly. Aroma: Very farmhouse-like, cereal fields, wheat, earth and light citrusy hops. Taste: Lots of cereal, belgian yeast, spicy and citrusy hops, Quebec malts aren’t overpowering, they result in light white fruits. Quite dry and bitter for such a low abv saison. Unfortunately, carbonation is rather low.

In short: A dry yeasty amber Saison with a distinctive character. Very good
How: Bottle 500ml. A few times, this bottle aged about 2 or 3 months, not much change from a super-fresh one
The look: Cloudy amber body topped by a medium fizzy beige head quickly receding to a small layer of foam
In long: Nose is pleasantly musty, a bit of dusty rug, an overall nice rural Saison character. Taste is crunchy dried cereals swimming in a sea of dusty yeast, dried bread, very low sweetness sensation, dried fruits skin, some spicy edges here and there, dried flowers and grapefruits. Carbonation was a little too intense with this bottle but I don’t remember the carbonation being so intense when the beer was first released (this bottle was even a bit of a gusher). This is dry and fluffy yeasty Saison that stands out from the crowd with a somewhat unique personality. The lady at my local beer store was really rude and useless though, she didn’t know how much spelt was used in this beer, she didn’t want to get me a box to pack my beers, she didn’t want to help me carry my bottles to the cash register, she kept telling me to leave her alone and ask someone who works there.

500 ml bottle. Pours an orange amber with a white-orangeish head. Smells like dry wood. Tastes very spicy, mainly coriander (I think?), sweet cereals in there, too. Earthy, floral, hoppy and somewhat citrusy finish. Medium bodied. Quite good.

Aroma is very spicy with notes of ginger, cinnamon and nutmeg. Very strong and complex aromas. Very generous head with with nice lacing. Average lasting. Color is amber and hazy. (Non filtered beer). Spicy flavors all over: again ginger, cinnamon and nutmeg. Also citrus notes and sugar cane. It realy taste like a Chrismas fruit cake. Interesting beer, very spicy.

Bottle at home, thanks to Dany - whose entire box I am drinking tonight, with Cole. Pours murky deep orange, with some surprisingly large floaties towards the bottom of the bottle. Thick off-white head, lacing is poor and ropey. Nose is very spicy, with tart grains (is this the spelt, because I do not like), clean cardboard, white pepper, lemongrass, and something earthy here as well. Initially disliked the nose, but it’s growing on me. Flavours are very earthy, almost a bit fecund, with dense malt, pepper, and a dry finish. Really a contrast of styles, not sure what to think of this.

Pours hazy amber with a thin head. Slightly sour aroma. Malty with some sour yeast. Funky. Very tasty I get some slightly sugary with a salty bite. It reminds me of wine gums in Europe.

500ml bottle from Peluso.

Appearance : Hazy amber almost orange with rather dense foamy white head. Some lacing.
Aroma : Rich spicy and phenolic brett. Light barnyard notes. Light hops, light yeast. Light spicy grain. The brett really take over. Light humid basement notes.
Taste : Bretty with light citrusy notes. Herbal hops with light malt on finish. Spicy grain with light yeast with more brett. Brett lingers further with spices. Great citrusy tang on the early finish. Fruits seems to pop up more as I drink it.
Palate : Generous and full carbonation. Fairly smooth but could be smoother. Good mouthfeel overall.
Overall : This brewery is really starting to brew some awesome stuff. Great brett beer. Not sure about the saison tag as the saison character is not very apparent IMHO. Great brett nose, nice basement notes. Great finish. Fairly drinkable. Long finish. Great herbal hops. Brett could feel a bit more complex. This is probably one of the best brett beers ever bottled here. Anyone looking for a brett fix should try this. Wow.

Bottle at a small tasting with Max, Paul, and Andy. Pours a hazed amber with a medium sized white head. Big musk on the nose, herbal and a touch of lemongrass. Interesting herbal notes right away. Smooth and musky, nicely balanced. Musk on the finish, yeast and a nice touch of lemon.

Bière trouble, couleur d’ambre, sur une solide lie et coiffée d’un mousseux col taupe laissant une belle dentelle au verre. Des arômes floraux d’agrumes, de poivre et de laitages. Légèrement amère avec une acidité notable. De corps honnête, elle est lisse et très effervescente. Elle se termine sur de rafraîchissants arômes.
