A mysterious fermentation process residing in oak barrels that leaves a woody note to a vinous and fruity nectar. Inspired by Flanders Red Ales. Quebec Malt. Hallertauer hops. Wild yeast fermentation. Aged in a Compton winery red wine barrels.

750 mL bottle from Broue Ha Ha served cool in a tulip glass. Gushed. Deep mahogany with a fair rocky tan head. Perfectly executed with lots of lovely sour and wild notes balanced by rich, dark fruit and brown sugar maltiness, sour cherries, leather and barnyard, very nice. Medium+ body with smooth effervescence and light astringency. Much like the nose, a masterful interpretation of the style, sour cherries, funky barnyard and plenty of rich malt support, superb; dry with minimal bitterness, good acidity and a long, dinghy, malty finish. Beautiful stuff.

Pours a rusty reddish brown color with a finger or so of eggshell foam. The nose has a touch of cider vinegar, toasted malt and some autumn ripened fruit; bosc pear, cherry and a touch of plum. The palate follows with nice balance and complexity. Big round acidic fruit on the front end falls into a earthy slightly sweet mid palate where the malt comes in and somewhat neutralizes the acidity for a vinous dry finish. Solid beer !

Pours a murky copper brown with a thin beige lace. Super freaky aromas of Rodenbach! A touch more fruity on the nose, less acidic than its big brother, altough some acetic acid is present. Smooth palate, low carbonation, fruity, some brett notes of barnyard, not as acidic as the nose would have tell. Really well balanced and easy to drink for a sour brown. Well done !

Boquébiere had one of our favorites -- out of roughly 50 beers we tried in Montreal over the 4 days -- their HILDEGARD ROUGE DES CANTONS, a 7% Flanders Red. I’d say that it ranked in the top 5. Aged in oak red wine barrels, this Quebec malt beer fermented with wild yeast had a deep mahogany color, an effervescence, a Rodenbach-like nose, strong initial tartness/sourness, some Brett and yeastiness, but finished out gently, with a slight grainy aftertaste. The wine barrel aging definitely imparted some tannic wine qualities. Well worth a try!

Bottle shared by some Canadian dudes at bottle share. Orange red pour, not too clear. A little sweet with candy and berry field, port wine, blackberry. Aged nicely. Tons of carbonation to the point where its hard to get down quantity.

Bouteille 750ml.

This rating is for the latest batch that came out in October. Murky brown-red without much head. Aroma of wood, red fruit (cherry-like) and maybe a bit of fresh apple cider. Taste is not that sour with just a little pucker and there are a lot of fruity flavors. Quite dry, I believe it would never be cloying. Makes my mouth water for another sip... Easy drinking sour/wild, one of the best to come out of Quebec! /homerism Seriously, seek it out while you still can. Lots of similarities with JP La Roja if you need some reference points.

Rating 1100. Bouteille 750 ml. 7%.

750 ml bottle. Pours an opaque orangeish red with...no head whatsoever. Smell is fruity, especially cherry, and woody. Taste is sweet, winey, black cherry. Some fine bitterness, wood. Quite a bit of acidity, tart, dry fruits. Wine. Medium body. Weak carbonation. Pretty good!
