COMMERCIAL DESCRIPTION
Savage is a wild beast...Inspired of the sour beers of Belgium. It’s malt brings sweet caramel and roasted notes while the special aging developes winy flavors with sour cherry accents. This fierce animal will be a great companion fot those who can tame it.

Aroma: warm fruity tartness , light sweetness on leather , touch of alcohol. Hints of red apple. Malty finish.
Appearance: hazed amber with murky green-brow hint. Medium lighter top. 3+
Palate / Taste: medium lighter body. Tart with sugar feel, slight woody murky end. Hop bitterness on fruit funky base. Finishing with hints of red gooseberry.

Appearance : Clear deep amber.
Aroma : Sour and barnyard with nice red fruits. Nice sourness. Some stinky feets and light caramel.
Taste : Light sourness with nice fruits. Some caramel.
Overall : Wow I was very afraid of this but it was quite good. Not very sour. Nice fruits, nice funk-ish barnyard. Very interesting for a first experiment. I bet they could do a very good sour after a few more trials.

Bouteille 750ml (2008). De couleur ambrée-brune foncée et voilée. Nez de levures fruitées terreuses et léger-moyen aigre (cerises sûres, notes de raisins vineux, traces de prunes rouges), moyen de caramel avec des traces de vanille, d’alcool et de fromage vieilli. Moyennement ronde en bouche avec un pétillement moyen et une texture légèrement crémeuse et aux petites notes vineuses. Goût de levures sauvages légèrement aigres et terreuses (cerises sûres, traces de raisins vineux) accompagné de notes de vanille et de bois humide lors de l’entrée en bouche auquel se rajoute un moyen goût malté de caramel avec des notes de fromage vieilli et des traces de pain mouillé puis en finale l’on retrouve des notes d’alcool ainsi que des petites traces herbeuses. Post-goût moyen, moyen-léger aigre de levures fruitées (moût de cerises et de raisins) avec de faibles notes d’alcool .

An hyperactive small-bubbled irregular head bubbles atop the clear orange-tinted mahogany pour and slowly settles to a lasting ring. Appealing and uncomplicated nose of vienna malts. Earthy, cherry pits and tree bark nose with a soft tartness reminiscent of tomatoes. Leafy flavour profile is almost juicy and pretty refreshing despite the fair amount of caramelly, vanilla touched residual sugars. Almost no alcohol is felt. A certain cheesiness (old hops?) is part of the flavour profile throughout and adds the wild kick that would otherwise be missing. Simple, yet effective. At 12$ a pop, It’d have to be a bit more intense or rich for be to buy it frequently, but it remains fun stuff. It’s nice to see such a young brewery had already planned to be doing experimental brews from its opening.

A reddish brown ale with a thick brown head. In aroma, earthy malt, ground cherries, chick pea puree. In mouth, a nice and smooth Flemish sour with nice acidic points, epsom salts, solvents, oily mouthfeel, corky notes. A bit short in mouth, but overall, good. Bottle from Peluso’s. Tasted Sept. 9 2010.

Brassin 2008. Verre de dégustation, provenant d’une bouteille, dégusté au Festival Bières et Saveurs 2010 (Chambly, QC). Arôme: Odeur de cérises légèrement sûrettes. Apparence: La couleur est ambrée avec une faible densité de bulle. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Léger goût de cerises sûrettes avec une pointe de caramel. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement vineuse. Moyenne effervescence en bouche. My Bottom Line:
Cherry esters and earthy wilderness move into lenient tartness for a quenching and lean Flemish-style Sour Ale.

Further Personal Perceptions:
-A ring of foam surrounds the hazy marroon red.
-This can make for a nice intro to these tart styles which can scare off quite a few.
-Complexity is not reached anywhere here, but that doesn’t mean the aroma, flavor profile and finish aren’t successful.
-There was room for the finishing tartness could be longer. The aftertaste was rather quiet after a second or two.
-Malts provide soft caramel notes which are covered in sour cherry esters.

Quevillon (2011) - Sainte-Thérèse, Quebec, CANADA - AUG 24, 2010
Sample drank at "La Soirée des Brasseurs 2010" in Shawinigan, on August 13. Red Caramel, small head. Aroma of tart malty berries, slightly smoky. Taste of malted barley and fruit, a little sour, notes of herbs, aftertaste a bit dry and slightly juicy. It’s a little wild!
