Txala Parta slowly ferments in wooden barrels where the fruit tannins combine with those of wood. Aged for six months, it is then bottle conditioned. The flavors mingle to become more complex, gaining length and power on the palate. The delicacy of this balance guarantees the pleasure of a glass.

As per the advice of my coach bvc, I'm going to lock this motherfucker in. Im back hoes and ready to reclaim my spot. It's called a backlog and a beautiful mind. Tangy tart apple nose, definite astringent almost vinegar notes, fresh fermented poopy apple. Gold pour, hazy, time of sediment and floaties. Tangy sour apple poopy sour funk. Lingering sour. Interesing. Not too much in the carb way. Lingering poopy apple.

Bottle, vintage 2010. Pours lightly hazy dark gold, mostly still but the pour does rouse a small amount of fizzy white bubbles. Aroma is phenols of pepper, light smoke and rubber band, sulfur notes, earthy apple character, wet hay and faint vanilla. Flavor is tannic apples, lightly tart and vinous, nuanced spices and a Lambic like dryness with faint cork and walnut notes late into the palate. Light body, refreshing and still.

Bottle (75 cl) from Systembolaget. Clear deep golden. Mature apple aroma with heavy horsestable leather aromas with some smokey notes, some wood and alcohol. Light to medium bodied, medium carbonation. Dry with low acidity and quite some tannins.

Cloudy golden color with no head. Woody aroma, hazelnuts, light apples. Dry mouthfeel, apple flavor with some residual sweetness later, wood, hazelnuts, light acidity. It has a good fruity character and very good balance.

Bottle. Pours a near clear orangish yellow a bubbly white head that dissipates nearly completely. Aroma has a rich apple note with a bit of sweetness and an earthy kick. Flavor is similar with rich apple that has a great underlying funkiness.

2010 bottle. Front says 6.5%, import label on the back says 7%. French Basque. Okay.
Allagash tulip, flat pour. Go aerate your own bottle bub.

Hazy, light honey colored brew. Soft carbonation trickling up.

A bit eggy at first, it dissipates some, but manages to linger. Smells of soil & standing water, hinting at something sweet. Faded potpourri. Middle on in, it’s that near rancid citrus melon scent you typically get with wild ciders, though maybe a little rounder.

Starchy/unfiltered texture. Sweet & sour. Tangy apples & random citrusy esters. Touch of powdered sugar & vanilla. Noticeable sulfites. Lingering tanginess. Decently bitter skin & yeast residue on the finish. Tastes English. Salesman described it as having a bit of a smoke to it, but I didn’t notice.

Subtle, prickly carbonation. A bit fuller then your standard spontaneously fermented cider.

Solid, but pricey.
