23.04.2016, 0,75l bottle shared at local tasting:
Small slightly fizzy shortlasting head. Aroma is slightly fresh fruity, sour apples, apple peel, apple cores, grass, minerals. Taste is slightly dry and fresh, apple peel, dry apples, minerals, apple cores, hay, paper, grass. Medium bitterness, slightly dry and watery mouthfeel. Fair enough.

750 ml bottle, caged and corked with a curious mushroom-shaped cork. For my 100th cider, I thought I’d pick up something special. I wasn’t quite sure what that would be, and so I was delighted to find this -- my first Eric Bordelet -- on the shelf at QFC-University village.

Opens with a faint puff of funk and pours a bright apple-juice yellow with abundant fizz. Indeed, this is richly carbonated and sparkles on the tongue. The aroma is a fusion of rich apple and a mild barnyard funk that keeps things interesting. The flavor follows, blending three elements together: the rustic funk, the sweet apple, and a tart acidity. The combination is really good together. It’s my favorite Norman cider to date, both because it works so well and because it lacks the aggressive sulfuric aroma from most of the others. It’s also light and refreshing at 5%. To me, this seems like an inspiration or target toward which some of the best PacNW artisan ciders are aiming. Very happy to have tried it.

tl;dr summary: Worth the money.

ivorywhite head that disappears fast but not completely (!). goldenyellow colour. aroma bit of old cheese, lots and lots of apples, bit of pears. taste is applesauce, apples with a rather sweet finish. medum body, rather carbonated. not much sour or funk character, but there is soo much taste of apples here, impressive. weird the label reads "brut" and the description here reads "demi-sec", indeed rather demi-sec. bottle 75cl / thanks rood!

If you would like to smell & taste jasmine, apples, honey, hay, sweat, than this is your cider. Awesome mouthfeel. Excellent balance between the sweetness and the acidity. Very nice cider!

Bottle from Pour House Dunsborough. Pours clear straw yellow with plenty of bubbles and a lightly fluffed white head. Nose is all about fresh apple skin with mild vinegar and vanilla running over some biscuit. Very dry in the mouth with loads of freshly cut apples and bright, very green skin. It’s like a dry Champagne. Works an absolute treat. One of the better ciders I’ve had

Unique. Luminescent golden pour with orange tinge. Aroma of fermenting apples, slight tinge of cider vinegar with an underlying vanilla note. Perfect carbonation introduces flavors of overripe apples which lead in to a smoky, band-aid-y type phenolic, but light and compliementary. Not too much to detract. Makes a low ABV cider like this quite interesting. Overall this is a light, sessionable chugger which has depth if you care to look. Really enjoyable however probably best quaffed in the summer months.

Bottle from Takamura Online. Nice semi-sweet apple nose, ripe but still a bit tart. Lovely deep golden color with a medium head that goes right to late. Very tasty—ripe fruit, minerals, light vegetables and soil, sweet enough to be fruity and have nice apple flavors, but nowhere near “sweet.” Dry, slightly sulfury, chalky finish. Nice, prickly carbonation. Very refreshing and tasty. Not super complex, maybe, but I could drink gallons.
