mullet (763), Melbourne, Australia Dec 20, 2007 This is the darkest cider I’ve seen - quite a clear deep gold, which makes it look like beer. Plenty of rich, jelly-ish (not jellyfish) apple in the aroma much like Thorogoods’ stuff has, combined with a touch of floral (violet) yeast. They’ve done a very good job of retaining the character of the fruit. There’s an intense, silky, sugary sweetness which doesn’t linger into the finish but the only balance is provided by some rather sharp, astringent, apple core tannins. No appreciable acidity, and not much character besides sweetness and tannin. Carbonation is only moderate and the level of astringency is disturbing. If this is "brut" I can’t imagine what the "doux" is like. Apple juice from the supermarket has way better balance. And if you’re wondering whether to cough up the big bucks to try some of this stuff, I give it nine don’t bothers out of ten.

Pours with a small, light white head covering a clear golden body. Some plastic and bitter granny apples in the aroma. Taste is a bit musty apple, and light barnyard in the finish. Nice aroma of mature apples, light esters and vinegar, light almonds. Good body structure, due to the residual sugars too; good flavor of apple juice, woody, tannic, a bit astringent and with a very light sourness. Balanced and complex. Very good. The aroma is sweet with notes of apples and wood, andd so is the flavor, leading to a dry tart finish. obguthr (707), Poquoson, Virginia, USA Apr 26, 2008 Buttery and quite phenolic aroma. Clear amber color. Apple flavor, decently sweet and tart. Musty and phenolic underneath. Bandaid finish. As low as this rating is, it is the best thing I’ve had so far from Eric Bordelet.
