Bottle, bought @ Den Lille Vinkælder, Fredericia.
[vintage 2007]
Pours clear deep golden with a small, fizzy, white head. Aroma has sweet red apples, mild tartness, a slight touch of sulphur. Medium to low carbonation, fine fat and oily mouthfeel. Flavour is sweet, red apples, mild tartness, high sugar content. Mild dry mouthfeel.

2008 bottles. Sampled on a couple different dates @ Astor Wines. Fizzy pour results in a rich golden hue. Smells of sweat & red & green apple skins. Stuffy. Tastes of rich sugars, & delicate, juicy apples. Bit of carmelization & honey. Bit of mold/mushroom. Just enough acid, but not much in tartness. Not all that thin. Semi dry, candied apple finish. Supple carbonation. Very easy to drink.

Corked bottle, vintage 2007, 3 years old
Low carbonation; blond color; a few small bubbles n the surfacem not yet a ful layer of foam. It has a nice aroma of sweet apples and apple juice, with an impression of nuts. Flavor of apple juice, quite sweet, but there is also an evident astringent touch to balance it, stronger in the end. One of the most complex sweet ciders around; good.

really this is what I want in a cider. a 2008 corked bottle. The appearance was a amber clear gold with just a bit or carbination. Apple and caremel aromas for an apple pie quality. Myabe even an apple brandy butter. The taste was super well balanced with sweetness and perfume. one of the best ciders I have had. Wishw as more available and affordable.

Bottle at Paul’s Thanksgiving tasting. Pours sparkling gold with a fizzy white head. Nice fruity fresh apple aroma with a light honey note. The flavor has sweet fresh apples with a light musty note. Above average for a cider.

Bottle shared at Paul’s Thanksgiving weekend bash. Poured a clear gold body with a small fizzy bright white head. Aroma had lots of underlying butter along with green apple slices and some pie crust. The flavor had metalic initial notes followed by apples then a copper butter finish. Thin to medium bodied. Blah, never rate your first cider in over three years a super rare ultra highly rated Canadian Ice Cider followed up by this. Let down.

750 ml bottle shared by Puzzl. Pours a deep honey gold with a soda-like head- fades to nothing. Aroma is honey, floral, fresh pressed apple cider, red apple skins, light toast, some mineral and metallic. Flavor is at first dog hair, astringent and light old rotting wood, but then it opens up to more flowery straight up apple must, honey, and sweetness. As it warms it really becomes quite nice. Strange but I liked it.

Bottle at Paul’s tasting, courtesy of Andy. Pours a clear gold with a thin white head. Big baked apples, clean and sweet. Medium to thick body, one of the nice bodied ciders I’ve had, big sweet, succulent apple flavors, very juicy and tasty. Soft and sweet with a light bit of acid. Really nice stuff.

Bottle. Apple, wood and weak yeast aroma. Golden yellow-orange colour. No head. Rather sweet apple and fruit flavour with a slightly dry finish.
