A swarm of flavor and a stinger at 11.5% ABV. The French saison yeast produces big, estery, phenolic aromas and flavors, while the wildflower honey from Madhava Natural Sweeteners in Longmont CO lends a spicy, sweet aroma with essence of dried fruits. Champagne yeast is also used to complete fermentation and create a dry finish, and a strong malt bill imparts a rich, golden honey color to the ale.

Bomber from Total Wine in Sacramento, CA. Pours hazy copper with a frothy white head. Aroma of dark honey and floral. With sour barnyard after. Full bodied. Flavor is honey, dark fruit, fruity esters. Very strong flavors. The dark fruit grabs my mouth - like bitter. This is quite dry. As astringent aspects. Lots of malt, but something balances that. Woot!

Sampled from bottle @ ChrisO after GBBF day 3. Clear orange golden color, average sized white head. Aroma is lightly malts, quite yeasty, indeed some honey and some herbs or spices. Taste malts, quite a lot of honey, herbs and spices, sweetish, lightly alcohol. Average body, medium carbonation. Not my beer, but I canít say there are real flaws in it.

On tap @ Radio Maria. Very hazy golden, thin wispy head that recedes to a ring rather quickly. Aroma is a bit strange, certainly honey sweetness, but some odd sweet pickles too. Palate is estery and very sweet, a little spicy. Too heavy for a Saison, with no yeast character.

On tap at Capitol Beer, Sacramento. Pours copper with a decent beige head and a honey aroma. There is a slightly sour fermented honey taste and a fruity finish. Doesnít have the yeast presence of most saisons.

Bottle. Head is initially small, frothy/fizzy, off-white, mostly diminishing. Body is medium amber. Aroma is moderately malty (caramel, toasted grain), lightly to moderately hoppy (apricot, herbs), with notes of honey, candy sugar, gum, alcohol (fusel - insecticide), pepper. Flavor is heavily sweet, lightly to moderately bitter. Finish is moderately sweet, moderately bitter, slightly husky. Medium to full body, syrupy texture, lively carbonation, moderately to heavily alcoholic. Well, itís certainly not a saison...itís a hot, syrupy sweet mess of a beer to be sure. There are some aromatic aspects that are pleasant and admittedly Belgian, but this is more like a braggot or some such, fusels and all (honey is quite a pain to ferment clean). As mentioned already, in the mouth itís syrupy sweet and very boozy, the antithesis of saison. So ignore the name and attempt to enjoy it as a sweet Belgian strong or braggot, but beware...itís very difficult to drink much of it, and itís a sure-fire hangover thanks to the higher alcohols.

Tap. Slightly reddish orange pour with a smaller white head. Lots of bread and sweet fruit esters. Cannot believe the ABV - youíd never know it. Decent brew.
