(NOTE: This is not Boulevard Nommo Dubbel. This entry is for the various test batches of Boulevard Abbey Dubbel that were never officially/commercially available, dating back to 2006).
The malt bill is a blend of Pale malts, Amber malts and Caramel malts with a small amount of wheat malt. We used Magnum and Simcoe for bittering and Saphir for finishing hops to end up at 25 IBU. Dark Candi Sugar and a blend of spices (coriander, cinnamon, and star anise) were added to the boil to increase complexity. Starting Plato was 18.5. The result is a Dubbel of 8.5% abv with a rich flavor of anise and clove, cinnamon and dark sugar, coriander and fruit aromas from fermentation. The beer is similarly complex in the taste, and finishes dry and very drinkable. We hope you will enjoy this Dubbel!
