Based loosely on the Smokestack Series’ The Sixth Glass, this abbey-style quadrupel is separated into a number of oak bourbon barrels where it ages for varying lengths of time, some for up to three years. Cherries are added to make up for the “angel’s share” of beer lost during barrel aging. Selected barrels are then blended for optimum flavor. The resulting beer retains only very subtle cherry characteristics, with toffee and vanilla notes coming to the fore.

(bottle - corked & caged 750 ml - 2013 vintage) Murky copper pour with a thin white head. Sweet malt aroma with lots of burnt caramel and sugar notes. Some sweetness from the bourbon and the barrel. Flavor is sweet malts as well with a bit of chocolate and a very nice subtle wooden hint under it. Wasn’t as sweet as I thought it would be as a quad thankfully.

2009 bottle. Pour is hazy reddish brown with a medium tan head. Aroma is brown sugar malt, plum, light banana, light tobacco, and light vanilla. Surprisingly subtle and delicate for a 5 year old barrel aged beer. Flavor is odd. Astringent and bitter up front with with a smooth vanilla malt profile after that. Then more bitter wood with hints of tannin, dryness, tobacco, and dehydrated fruit. Really subtle and intriguing aroma followed by a complex and evolving flavor. No oxidation at all. Not great but really interesting. A bit more vanilla and bourbon in finish as it warms.

So crisp and smooth. Way to easy to drink for 11.8%! Light sweet bourbon nose, taste is similar with a very mild heat... Delicious! ---Rated via Beer Buddy for iPhone

A hazy reddish brown beer with a medium off-white head. The aroma is toasted grain, fruity, brown sugar, and bourbon. The flavor slightly wood, bourbon, tart cherry, with a burnt caramel aftertaste. The alcohol is present but not dominant.

From the March 2014 3R6P tasting. +++ Sampled from a 750 ml brown bottle this beer poured a cloudy brown color with a large foamy orange-white head that lingered and left good lacing. The aroma was bourbon, coconut, vague fruity hops and a bit of pineapple. The flavor was bourbon, sweet caramel, wood, pineapple and lemon. Long finish of bourbon, coconut, wood and pineapple. Moderately full bodied. Interesting.

Thanks to the friendly folks at pizza plant for this sample. Amber pour with a thin off white head. Nose is sweet burnt sugar, brown sugar, caramel, Bourbon. Taste is sweet Belgian quad with nice tart yeast/funk, and that moves into a buttery Bourbon finish. Thin mouth feel. Nice.

Much thanks to Dmac for sharing this bottle. Pours out a somewhat muddy apple cider color with a small off white head. Aroma is of bourbon, oak, caramel, dried fruits and some light alcohol. Taste is complex, light vanilla, caramel, toffee, bourbon, oak, sweet dried fruits, cherries, light dates. Some warming alcohol comes in, in the finish. Complex and leaves some sticky residue on your lips.....

Major flaw here for me is I don’t like cherries. But if you like quads and cherries then this may be your new favorite because I still liked it despite not liking the focal flavor of the beer that makes it unique. Maybe people shouldn’t buy, much less rate beers after reading the label on the beer with an ingredient they dislike. Douches....
