COMMERCIAL DESCRIPTION
Our Harvest Dance Wheat Wine is a celebration of John Barleycorn’s cousin wheat, the great staple crop of Middle America. Wheat wines are a somewhat recent stylistic development, akin to barleywines in strength, but brewed with a large portion of wheat malt, which provides a soft mouthfeel to balance the big body of these warming brews. We add a generous helping of Hallertau and Citra hops, and age the beer on both French and American oak, resulting in a beer that opens up with a warming burst of tropical fruit flavors, adding subtle Sauvignon Blanc notes before rounding slowly to a dry, oaky finish. This is a perfect beer for sharing with friends and family as we gather together for the fall and winter holidays. Pairs well with aged cheeses or seasonal squash and pumpkin dishes.

Rated on 6-23-2011 (Corked and caged bottle) This beer forms a medium sized fizzy head that mostly diminishes, transparent golden body, floaties, and spotty amounts of lacing. The aroma is malt, oak, wheat, pine, grassy hops, sweet, and tropical fruit. The taste is sweet, oak, bitter, malt, fruity, hops, and a long dry finish. The mouthfeel is spritzy and this beer is medium bodied. This is a sipping beer at 9.1%ABV.

3/5/2014. 750 ml. corked and caged bottle. Pours amber color with a white head. Aromas of sweet fruit, caramel, malt, grapes. Flavors are somewhat sweet at first, but with bitter hops following through. Very enjoyable.

Bottle from, dammit, I forget, anyway, good aroma, sweet. Toasted wheat, oak/ vanilla, little citrus, on the orange side. 1st pour clean orange color, bid initial head that faded to a ring, no lace, just a steady ring. Sweet flavor. Medium body, oily creamy mouthfeel, sweet drying finish. Nice, I won’t say it overwhelms me, but it’s good. Getting a fair amount of the wheat, but oak leads the way. Sometimes think I’m getting some yeasty spice, but think I’m crossing up some of the barrel. Worth a try.

750 ml bottle: hazy, bright copper color with a fluffy off-white head. Aroma of intense citrus, candy/bubble gum, peach, pineapple with hints of spiciness. Flavors are apple, peach, citrus with Hints of banana, spice, flowers. Lively carbonation. Finish is relatively dry. Nice balance.

750 ml bottle dated 2010-01. Aroma is interesting and fairly fruity with light stone fruit, overripe pear and red apple. Some light alcohol spice in the finish and medium light wheat notes. Not really any hop character. Pours a slightly golden orange with a medium small, white head that recedes quickly to the edges where it lingers a bit. No lacing and medium small legs. Flavor has a moderate sweetness with a lot of fruit character. Tons of light stone fruit, pear and apples. Some medium alcohol spice in the finish. No hop flavor and only low bitterness. Some low honey notes from oxidation, but this has otherwise aged pretty well. A light toasted bread note. Mouthfeel is medium full bodied with medium to medium low carbonation. Low astringency and medium low to medium alcohol warmth. Overall an alright beer, but it really lacks any hop character to balance the sweetness. The malt character is also sweet and a bit one dimensional. Not much in the way of maillard reaction flavors or aromas.

Bottle. Pours a heavy amber with beige head with some sediment that escaped out of the bottle. Some chardonnay, light citrus hops, green apple skins, hints of pepper; full body, moderate carbonation, dry, somewhat bitter at first and grows more so yet still remains balanced, tasty.
