Doppelbock was first brewed in Munich around 1700 by the monks of Saint Francis of Paula, to sustain them through the Lenten fast. They called their full-bodied brew “Salvator.” Today it is customary to pay homage to the good brothers by giving doppelbocks names ending in “-ator.” Our version bids a fond aufwiedersehen to tradition, charting a flight path into bold new territory. Medium amber in color, it offers a heady, estery banana aroma. Rich maltiness predominates, with cedar aging lending just a hint of spice to the finish.

Smell of wood and malt in the aroma while the appearance is solid amber. The taste is malty as a good doppelbock should be with a background of acidity that leans towards the cedar’s influence. A very good doppelbock, not the best but still good and a little unique.

rating from memory because this has been discontinued. will be replaced by nommo dubbel. both scent and flavor were far too dominatined by cedar. i wish i had aged some. cedar probably would mellow and thus make for a better beer.

bottle. a little over 2 years on it. doughy sweet dried fruits with a touch of sherry oxidation, and some light cardboard. cedar character has faded over time but some light spiced bread character is still present. not bad, but probably better fresher.

750 ml. bottle corked n’ caged- 2010 vintage, technically expired in may 2011, but I think it’ll be fine- Pours a beautiful semi cloudy ruby red with a nice 2 finger off white head. Aroma is malt, cherry (assuming from the cedar aging), definite wood, little hops. The flavor is sweet malt, cherries, cedar wood, deep and complex yet very drinkable and sessionable, there is a mild bitterness, mostly coming off as dry. This beer could get you into trouble, I could session this all night, and be shitfaced halfway through the night. The body is full, carbonation is medium high, finish is extremely dry yet sweet.

6/26/11. 750mL bottle. Creamy brown/red pour with a thick, frothy brown head that lasts a long time and laces a little. Relatively subtle aroma of sweet caramels and brown sugar with a touch of metal and wood. Caramelized and burnt sugars in the flavor that packs a more bitter coffee punch than the aroma along with a hint of wood and a dash of metal. Not bad!

Bottle from a trade with crajun. Bours clear medium brown color with off white head. Aromas of cedar, caramel and toffee with some dough. The cedar really comes through adding a spiciness to the flavor. Medium body with average carbonation. The cedar adds an interesting touch that I really enjoyed. Thanks Kevin.

Bottle, thanks to adam I believe. Clear red brown with a beige head. Dough malt aromas with a slight medicinal infection. Sweet red fruit dough. Dirty funky. Thin body. That medicinal infection kinda kills it. 5/3/6/3/12

Bottle for pikapp327’s graduation! Brownish pour with a huge tan head. Aroma is alcohol, dates, and brown sugar. Taste is smoked meat, more dark fruit, malts, sugars, and alcohol.

750ml bottle. Reddish brown pour with a small amount of off-white head that does not stick around for very long. Small amount of cedar in the aroma with some dark fruit and caramel. More cedar in the taste which makes this a very intesting Doppelbock. Banana and raisin flavors as well. I enjoyed this - very different.

One of my favorite Smokestack beers. The beer pours a medium brown color with a tan head. The aroma is great. I get a mix of toffee and caramel along with some hints of cedar and bananas. A little bit of raisins and other dark fruit also comes through in the aroma. The cedar is more present in the flavor than it is in the aroma. A nice, dry cedar characteristic melds very well with the dark fruit and toffee. There is also a little bit of alcohol present in the flavor, as well as a little bit of grass. Medium mouthfeel and medium carbonation. A very nice spin on the doppelbock style.
