"Do you know what dwells in a glass?" asks Ole, in Hans Christian Andersen’s The Watchman of the Tower. Better known for stories such as The Little Mermaid, Andersen wrote this short, cautionary tale for a somewhat older audience. Our quadrupel ale, also meant for the mature connoisseur, is a deep and mysterious libation, dark auburn and full-bodied, its sweetness deceptive. Bottle at Colonel Mustard, march 31st 2015. orange to brown color with a medium offwhite head. Aroma is floral with sweet caramel, raisin and alcohol. Taste of sweet caramel, fruity yeast esters with a mild spicy tone, dark fruits in finish. Bitterness is mild and easy.

750ml bottle. Pours a pretty auburn, red color. Nice head that quickly dissipates with very thin lacing. Nose is estery fruit characters, lots going on. Some leafy, woody things. Booze is well hidden. Taste is dry, bitter fruit and some mild to medium sweetness. Some bittering hops. Almost barleywine-esque. Very nice beer. Mouth feel is medium body and a nice crisp carbonation. Definitely would buy again.

UPDATED: MAR 22, 2016 12oz bottle, poured into a goblet. The aroma is bright and intense with initial boubon vanilla and caramel notes. The aroma of caramel stays and is joined by fruity notes of nectarine, banana, citrus, pineapple, and some clove-like spices. It pours a murky auburn hue with foamy, dense soap, beige foam head that exhibits great retention and a mild lace. The taste is a medium high sweet and medium / medium low spicy bitter. The texture is thick with abundant foamy carbonation. The full body is flavors with ripe, fleshy fruit, molasses, and wood with a zippy, crisp finish of spice and molasses with late, light plum notes and it leaves a bitter wood and leafy aftertaste with a note molasses.

Bottle from Sherbrooke. Cork almost took out my eye when it popped off. Deep reddish amber with lots of bubbles that quickly fade. Funky, with cherry, banana, and alcohol dominating the aroma and cough syrup and sugar in the background. Fairly dry, hints of caramel and clove, but mostly just alcohol burn and the accompanying bitterness. This doesn’t taste like your usual quad... the alcohol is very apparent and there’s not a lot of malty or hoppy or yeasty body to it. If someone told me this was a brandy I would be impressed and wouldn’t question it at all. Not bad, but also not anywhere close to being on-style as a quad. If you’re expecting a big, malty, fruity, syrupy quad, look elsewhere. If you can appreciate a good brandy or scotch, this might be more for you.

The aroma is brown sugar with grass spice and fruit. The appearance is typical for the style as is the palate. The taste is like the aroma. Overall pretty average quad.

Beige head reddish brown pour soft carbonation aromas caramel sugar cane alcohol spice five spice bread rich fruits prune plum the flavours plum prune caramel five spice port doughy note toffee burnt sugar taste so nice good body involved crisp hop note citrus stone fruit mix there raspberries lots of goodness the finish such a delightful tasting Quadruple plenty of fruity hops involved a spicy backing rich malt lasting taste along with the alcohol high class Quadruple so enjoyable
