"Do you know what dwells in a glass?" asks Ole, in Hans Christian Andersen’s The Watchman of the Tower. Better known for stories such as The Little Mermaid, Andersen wrote this short, cautionary tale for a somewhat older audience. Our quadrupel ale, also meant for the mature connoisseur, is a deep and mysterious libation, dark auburn and full-bodied, its sweetness deceptive. As Ole describes the glasses in turn, their contents become more ominous until, in the sixth glass...

Boozy bitch - raisins, lots of bubblegum (this is a theme of their belgians, a little much on this yeast), taste is not hot, but slightly solvent-like, bubblegum, raisins and prunes. Easy enough to drink, but a little too boozy and not enough richness.

12oz bottle to chalice. More brown than red pour with a luxurious head that forms some nice colonies on top after resting a bit. Aroma of Belgian yeast and a little candy sugar. Nice malty flavor with a spicy, peppery, and ultimately dry finish.

Pour is a cloudy brown amber, small off white head. Aroma has a bit of banana and dark fruit notes upfront, slowly mellows out to some caramel malt, yeast and dark fruit as it warms up. Taste is similar to aroma with some dark fruit and yeast that become more prevalent as it warms up, some herbal hops as well. A full body with good carbonation on the palate. Finish is sweet caramel malt, yeast, dark fruit plums and figs, brown sugar and mild bitter herbal hops for balance with a bit of sweet brown sugar and alcohol on the end. Finish is long and slightly dry. A noteworthy full flavored brew, very nice.

Been aging in my cellar for about 11 months. Cloudy golden brown with creamy tan head. Dank dried fruits, raisin, date, prune and banana. Flavors of ripe banana, caramel, brown candy sugar, bitter chocolate and a strong alcohol presence. Thanks dlovell2!

Murky sienna brown with a huge off white foamy head on top. Yeasty caramel doughy nose. Sweet malt caramel on the taste ...comes a long a bit undecided not going the full force to a full bodied flavor.

Murky brown foamy head. Raisins, prunes in the taste of the main body. Thick feel. Spicy end that tingles the lips. Alcohol whafts up the nose. A little card boardy. Good but not great.

Poured a hazy mahogany from the bottle. Bubbly coffee cream head. Fizzy first bite. Sweet, tart, syrupy goodness. Head sticks around for the first few mouthfuls. Great quad. Heavy enough to have your attention, and bubbly citrus to keep you around.

Pours a murky dark amber with a thick mocha head. There’s a floral, caramel, and dark fruit aroma. Sweet and mildly bitter taste that was on the boozy side. Flavor’s of raisins, caramel, fruits, herbal and earthy notes. Medium body that was lively carbonated with a dry boozy finish.

Very nice quad. 12 oz bottle, sold in 4 packs; not a bad deal at all. Cloudy light brown with huge pillowy head. Aroma is raisin, fig. Quite sweet on the palate, but not sickly, malt and candi sugar, Belgian yeasts, a little boozy kick. A treat for sure. I’m splitting the bottle as an aperitif but would be ideal sipped with food. (Thanksgiving is not a bad thought.) Not quite as complex as some of the Trappist versions IMHO.
