Niepowtarzalny smak Brackiego Koźlaka powstał dzięki unikalnej recepturze Jana Krysiaka opartej na specjalnej mieszance słodów: jasnego pilzneńskiego, monachijskiego, wiedeńskiego, słodu Caraamber i specjalnego dodatku, mchu irlandzkiego. Jego tajemnica to wyjątkowy proces warzenia i fermentacji w otwartych kadziach oraz trwające 60 dni leżakowanie. Brewed by Grupa Żywiec S.A. in cooperation with Browamator. Extract of worth 20 P. Zwycięzca VII Konkursu Piw Domowych podczas Festiwalu Birofila 2009.

Bottle. Pours an opaque amber brown with tan medium tan, almost yellow head. Low carbonation. Not much in the aroma but alcohol and toffee malts. Flavor is malty, with a hint of coffee, and alcohol in the finish. Something tastes a bit off... It leaves a bad taste in my mouth.

UPDATED: DEC 29, 2009 Seasonal doppelbock. Nice aroma, followed by a bit unpleasant, harsh start. Later some complexity reveals, and goes on with an enjoyable, malty finish. While far from being awesome, this initiative is worth praising - after all, it’s macrobrew, and it’s Poland.

Appearance: Pours brownish red body reminding me of a strong essence black tea, body texture is perfectly clear, body carbonation is mild to moderate, seemingly natural, head is initially medium, very dense and thick, frothy, pillowy, slowly decreasing to small, very long lasting, leaving some lacing, very beautiful in its toffee like colour reminding cappuccino foam.
Aroma: Very nice aroma of a well brewed and fermented, fresh barley malt, nice and strong yeastyness, very dusty and strong with a spicy groove, nice herbality going on the top and quite strong and stylish alcoholic background warming up the aroma and all its components, toffee, whipped cream, chessnut, red fruits, wallnut peal, red wine grapes, red currant, cherry, red gooseberry, cranberry, wildberry, spicy - leavy hops are quite honest.
Flavour: Nice, strong alcoholic background is warming up the front palate and making all tha flavours becoming more vivid and upfront. Very well pronounced fat malty base consisting of Pilzen, Vienna and Munich malt resulting in the notes of toffee, coffee, dark chockolate, roastyness, nice aspect of seasonal malt, very soft mountain water base, sharply bitter back of the tongue due to the pronounced bitter hops and highly aromatic spicy - leavy hops. Sharp taste, well balanced with soft water and mellow, tasty yeast. Finish duration is long.
Palate: Body is full, texture is complex, ballancing between dry and syrupy, carbonation on palate is satisfying and quite lively, finish feel is quite alcoholic but ballanced with highly astringent notes of bitter hops, quite sticky at moments.
