Stout au moka

L’Exploité est un stout au moka, robuste et sucré. C’est au XVIIIe siècle que le nom « stout » fait son entrée pour de bon dans l’univers de la bière. Il aurait été utilisé pour identifier les porters plus forts, plus goûteux et souvent plus secs. À cette époque, ces bières noires passablement sucrées et faibles en alcool étaient souvent consommées par les « porteurs » de colis desservant la gare et le port de Londres. C’était les débardeurs du temps. Exploités par les négociants et les importateurs, payés à la pièce, ils travaillaient fort et ne prenaient guère de pause pour manger, préférant boire rapidement une pinte ou deux de bière noire et sucrée et surtout, la moins chère, d’où son appellation bière des porteurs ou, en anglais, porter’s beer. C’est aussi à cette époque que le café et le cacao firent leur entrée en Angleterre et il n’était pas rare que les porteurs aient à en transporter de lourdes poches pour des commerçants qui faisaient fortune à transformer ces grains. Le premier café, de type arabica, provenait presque exclusivement de la ville portuaire de Moka, au Yémen, et avait des arômes subtils de chocolat. Pour reconnaître le travail de ces exploités qui ont transporté des milliers de poches de café sur leur dos courbé, nous en ajoutons à notre stout. Et comme dans certaines régions du monde le mot moka est associé à un mélange de saveurs de café et de chocolat, et que les porteurs ont sûrement dû en transporter nombre de poches aussi, nous ajoutons des fèves de cacao transformées ici même, à Saint-Hyacinthe. Cette bière contient aussi un peu de lactose. L’Exploité offre des notes suaves de torréfactions complexes allant des noix grillées au caramel brûlé, en passant par le café moka et le chocolat doux. L’amertume et la pointe d’alcool sont enrobées des sucres résiduels, ce qui équilibre et adoucit les saveurs en bouche.

L’Exploité is a mellow and sweet moka stout. The word “stout” first emerged during the 18th century, apparently used to differentiate stronger porters that were typically tastier and drier than usual. During this period, semi-sweet and low alcohol dark beers were often consumed by Londons dock workers, who were also known as “Porters.” Exploited by merchants and importers, paid per unit carried, Porters worked hard, barely stopping to have a full meal, preferring instead to drink a sweet, low alcohol beer, often the cheapest one, which came to be known “Porter’s beer”. Coffee and cocoa beans began appearing in England during this era. Porters frequently had to carry heavy bags of these products for merchants who were making a fortune processing these beans. The first coffee, an arabica variety, was primarily imported from the port city of Mocha in Yemen and had a subtle cocoa aroma. In tribute to these exploited porters who carried thousands of coffee bags on their broken backs, coffee was included in this beer. As in many parts of the world, the word mocha is associated with a flavor combination of coffee and chocolate, so we added some locally processed cocoa beans as well, since porters must have surely carried their share of these cocoa bean bags too. A bit of lactose and a touch of vanilla have also been added to complement these flavours. L’Exploité presents mellow and complex notes of torrefaction ranging from roasted nuts to burnt caramel, incorporating Mocha coffee and sweet dark chocolate. The low bitterness and alcohol bite are wrapped in the residual sugars, which balances and smoothes the flavors in your mouth.

Bottle: Thanks Secret Sinterklaas: Served in a Chouffe glass: Medium sized serious brown foamt head on top of a black colored beer. Already a very intriguing beer! Aroma is a nice mix of roast, toasted bread, iron, coffee beans and coffee roast, some chocolate, some mocha, bark, cacoa/sweet chalk toast/roast and some sweet wood roast. Flavours of roast, malt roast, coffee, some coffee roast, bitters, cream, some brown sugars, mocha, hay/grain/wood toast/roast, a hint of iron/metallic tones, chocolate, dark chocolate milk tones while not lactic, wood roast, sweet roast. Awesome! Aftertaste is a mix of bitters, roast, malt roast, some coffee, mocha, chocolate and brown sugar tints with a hay toast ending. Low carbo, creamy and thick and close to siljy mouthfeel, medium to full body and a thicker creamy texture. Lovely beer! Thick, roast, lot of different sweet sources while this beer does not become too sweet at all. Impressive!

341 ml. bottle sampled @ Delirium Cave. Pours a dark brown, very dark with a faint bordeaux hue & very solid creamy mocha head. Nose is sweet & creamy, very milky, faint condensed milk, lots of milk chocolate, mocha, sweet, lacto, lots of brownies,… Taste is very creamy, lots of lacto, milk chocolate, chocolate mouse, grounds everywhere, coffee grounds, touch grainy feel with touch condensed milk,… Delicious overall, great stuff to drink. One of the finer ones I have had within the style.

Pours an opaque black with small brown head that disappears quickly. Aroma is sweet, roasted malts, cocoa, coffee and some woody notes. Taste is cocoa, coffee, sweet lactose giving that coffee and cream/mocha flavour, vanilla, and roasted malts.

The best of the bunch here. A big roasted and dark beer with a vanilla and woody accented note in the aroma. Sweet and molasses like flavor with a big punch of roast and chocolate.

341ml brown bottle. Black and opaque in the glass. Thin dark brown head with messy lacing. Nose has chocolate and caramel. Taste has choclate, coffee and caramel, sweet and rich. Bit of sweet chocolate and coffee beans in the aftertaste. Body is medium with average carbonation. Pleasant sweet and rich desert type stout, I enjoyed it, but it would not be any everyday drinker.

341ml bottle. Pours black with a mocha foam coloured head. The nose is dried fruit, cocoa, pretty darn boozy for 6.5%, earthy notes, and caramel. The taste is sweet, with immediate alcohol, burnt coffee, molasses, dried fruit, an almost cognac like note, and more coffee in the surprisingly dry finish. It’s a little uneven, but it sure ain’t bad.

Bottle from Sherbrooke from the BDM Mix Pack, 6.5%. Dark brown pour with a non-existant head (lost carbonation in import/bottle?) Super sweet cocoa and vanilla on the nose, not a ton of earthy roast malts. Taste is very rich in chocolate, and malts, with a sweeter than expected finish. An excellent stout, reminiscent, though not quite as mind-blowing as Aphrodisiaque

de couleur noir avec couleur moka on sens plusieurs aromes sont présent comme le moka et qui est tres prenoncé et des notes de cacao et en bouche cest un gout onctueux a cause du lactose on goute le moka et cest un pas tres sucré et le cacao en fin bouche et le tout enrobe par un gout onctueux j aime vraiment cette biere (rate 117)
