ABV: 5.3%
We added wild yeast to a portion of our Saison and aged it for three months. When there was no sugar left for the Brett to devour, we bottled it and let the funky character develop for another six months.

Bottle 330ml.

Unclear medium orange colour with a small to average, frothy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, toasted - caramel, moderate yeasty, citrus, tart, brett, yeast, barnyard notes. Flavour is moderate to light heavy sweet and light light acidic with a average duration, dry, citrus tart, fresh. Body is medium, texture is oily to watery, carbonation is soft. [20121203]

Bottle shared at Craft Beer Co. - Clerkenwell, London. Pours clear, red-gold with a fine, white cream head. Big funky nose, light manure. Light to medium sweet flavor with lots of funk, moderate berries, bread. Light to medium bodied with fine to average carbonation. Clean finish with more manure (paradoxically), light berries and further bready malts. Decent, although I like the regular saison more.
