5am Saint is The Holy Grail of red ales. We live in a world of disposable deities. Someone, somehow has managed to press that big, flashing moronic override button and we’re hard wired straight into the pockets of false idols trying to make a quick buck. Sadly, for a lot of people the same mentality applies to beer. But who’s to know what’s worth worshiping when monolithic advertising budgets have you sucked down the rabbit hole in the blink of an eye? At BrewDog we are on a mission to open as many people’s eyes as possible. Cast away any aspersions and let the crook of BrewDog be your guide in a whirlwind of conformity and mediocrity. Once this ruby liquid forms a foamy halo around your glass, you’ll never want to look back.
Malts: Marris Otter, Crystal Malt Hops: Simcoe, Chinook, Nelson Sauvin, Centennial Twist: Loads of late hops and bucket-loads of dry hops

UPDATED: JAN 25, 2013 In this style, as a refreshing session ale, this is a favourite of mine. Looks great - amber with a decent foamy head. Nice upfront hoppy aroma with a well balanced malt taste that follows through nicely. Very refreshing and drinkable. If I was socialising in a traditional cask ale pub and they had a keg of this on, I’d be drinking it all night.

A - Pours a slightly hazy copper-red color with a finger of frothy off-white head atop. The head fades down at a normal pace leaving behind some nice lacing. S - Aroma is full of sweet toasted caramel malts and lots of piney/earthy hops. Bit of citrus mixed in there as well. T - Starts off with some huge piney hops with some strong bitterness. Bit of toasted sweet caramel malts as well. Through the middle, some more bitterness comes through with a bit of bready malt character. The finish is a mix of piney bitterness and some light citrus that ligners. M - Medium bodied with moderate carbonation. Feels smooth with a strong pine resin feeling left on the tongue. Quite dry as well. D - Very drinkable. Fairly bold flavors for the 5% abv. The bitterness and hop flavor is nicely balanced by the malt though.

Sarà ma io questo tipo di birre, le berrei in continuazione, non mi appesantiscono e vanno giù che è una goduria, lasciando anche una bocca pulita e appagata. Buona dal colore, all’aroma frutta-caramello, al palato asciutto.

UPDATED: DEC 1, 2011 Aroma: Caramel, chocolate and cherry notes.

Appearance: Dark amber/red colour, frothy head with good retention. Clear.

Taste: Strong lychee notes followed by a bitter dark chocolate taste. Very well balanced.

Palate: Thin texture. A surprisingly light body for the depth of flavour.

Overall: Complex in flavour, with the fruitiness and bitterness complementing each other perfectly. Another great beer from Brewdog.
