The unsung heroes, the foot soldiers of the revolution. We owe a huge debt to the billions of tiny yeast cells that work tirelessly to ferment sugars into alcohol and CO2. But yeast isn’t just here for the grunt work. Yeast has the power to change the flavour, aroma and complexion of your beer in an instant. This series is designed to showcase the impact different yeasts have on the same base beer.
This series of 4 beers gives the limelight to four totally different yeast strains: Belgian Trappist, Pilsen Lager, American Ale and Bavarian Weizen. All 4 beers have been brewed to the same ABV using a blend of Centennial and Amarillo hops and a backbone of Pale Ale, Munich and Cara Malts. Malts: Maris Otter, Crystal Malt, Caramalt
Hops: Centennial, Amarillo
Twist: Each beer is identical except for the different yeast used to ferment the beers creating 4 radically different beers from the same starting point

Bière qui fait partie d’une remarquable série de 4 bières consacrées à la levure. Chaque bière a le même niveau abv de 6,3 %, les mêmes houblons Centennial et Amarillo, et les 3 mêmes malts : Pale Ale, Munich et Cara. La différence étant donc dans la veine de levure. Ici la levure trappiste belge, ou à tout le moins un clone valable. Couleur orangé, abricoté, avec un léger trouble. Bulles moyennes pas très nombreuses. Mousse qui est un nappage crémeux de surface, stable. Arômes de fruits mûrs, agrumes, seigle, pain gris. 1ère bouche assez grasse avec une prise sur le malt clair, très belle amertume. Arrière-bouche sur l’écurie, avec une pointe d’Orval. 2ème à la belle matière, équilibre malt/houblon. Arrière-bouche sur l’amertume, assez complexe. 3ème à la densité plus importante. Arrière-bouche plus maltée. La longueur donne une belle progression avec du bois blanc. Les jambes sont fines et marquées. La levure est douce et fine. L’alcool est efficace pour le soutien des saveurs. La finale donne un retour à l’Orval. CONCLUSION : une très belle bière, n’en déplaise à certains. Evidemment, si on s’en réfère au nom de l’étiquette, on n’a rien compris, et en tant que trappiste elle serait un peu bizarre, quoique l’Orval en soit une aussi !!!! Mais il s’agit ici de levure trappiste greffée sur un type ipa, un peu comme les greffes des ceps de vigne, et là on peut coter haut ...

Keg at BrewDog Glasgow. Quite nice, also had it in the hopinator with mosaic hops, honeycomb, & danes; miles better!

Bottle nice amber body with off white head. I think the unleash thde yeast series is a very interesting experience and shows how important the yeast is for the taste of a beer. I will not rate them individually because for me the taste of each is not that important. I liked most the American Ale followed by Trappist and Lager and I didn’t like the Weizen. Great interesting series.

Bottle (33 cl) from Systembolaget. Clear deep golden, medium white head. Bready malt aroma, some peppery and bubble gum phenolics, apricot and orange hop aromas. Medium bodied, medium carbonation. Dry with medium bitterness.

Bottle from Beers of Europe. Poured a clear golden colour with a thin, tight white head. Definite Belgian yeast in the aroma and some soft fruit and light spice. Initial flavours of bread dough, lemon zest and chewy malt. Quite a thick mouth feel, almost syrupy. Finish was malty, fruity and with some light hop resin.

Aroma: Smelling of bread, banana, spices and yeast.
Appearance: A clear amber colored beer. A off-white head with good lacing and good curtains.
Taste: Tasting bread, pear, spices, pepper, clove, apple peel and yeast.
Palate: Medium carbonation, a soft texture. A medium body with a somewhat dry finish.
Overall: The most complex in the unleash the yeast series. The yeast covered the citric hop aromas.

Copper, light hazed, big beige head. Smells of belgian yeast esters, heavy fruits, some faint citrus hops and malts. Moderate sweet, very fruity, dark fruits, banana, spices, very complex compaired to the 3 other, quite dry mouthfeel as well, maybe the Trapp yeast is more hungry? Medium bitter finish, not very hoppy, but quite spicy. Mui bien

From a bottle at a bar. The taste is sweet and not too strong. I think it’s a good way to enter the Belgian styles.

On tap in brew dog Glasgow. Hits the spot. The Belgian yeast taste is there but on a carrier of brew dog pale ale. A thirst quenching Belgian style. Well worth it. Never tried from the bottle but the tap is great.

Bottle from Cornelius. Clear golden body with a medium off-white head. Light carbonation. Great lacing. Aroma of grassy hops, light peppery spice and zesty orange. Flavour of candy-sweet Belgian yeast balanced by bitter, juicy hops - pear and citrus notes. Medium body with an oily mouthfeel. Average carbonation. My favourite of the Unleash The Yeast series - although it’s a long way off the finest Belgian Ales I’ve tasted.
