During the fermentation of the first batch of this Abbey-style dubbel, the yeast «died» and was «resurrected» by brewer Chris Cashell. This beer is not unlike those that certain Belgian monks have been brewing since the 16th century. Made with five types of barley malt and lots of sugar, this beer is quite strong and flavorful, without being too sweet.

[ Trade by CaptainCougar ]. Clear medium amber color with a large, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to light heavy malty, caramel, berry, brown sugar notes, moderate hoppy, orange, moderate yeasty. Flavor is moderate sweet and bitter with a average duration. Body is medium, texture is watery to oily, carbonation is soft. [20091024]

Clear medium to dark orange amber color with a small to average, open and frothy - fizzy, good lacing, mostly diminishing, off-white head. Aroma is moderate malty, caramel, dark malt, nutty, nut peel, light yeasty. Flavor is moderate sweet and bitter with a average to long duration, malt bitter, nutty, caramel, dark malt, light yeasty. Body is medium, texture is oily to watery, carbonation is soft to flat. [20150811]

GBBF Day 1. Cask. Clear amber beer, few pale cream colour bubbles. Palate is light and semi dry, decent fine carbonation. Nice condition. Orange and orange peel, marmalade, trace of lemon. Little floralness before the light semi dry finish. Bright and tasty.

Bottle at the Funky 6. Lightly hazed, amber pour with a frothy, off-white head. Dark, dried fruits and Belgian yeast on the nose. Flavor is fairly sweet, malty, with caramel, light roast, prunes and mild bitterness. Medium in body with average, creamy carbonation. Sweet, lightly warm on the finish with dark, candied fruits lingering. Very good beer.

Bottle, 75cl corked, courtesy of fonefan. It pours with lots of microfloaties. Dark orange-golden body and an off-white head. Fruity-sweet nose with alcohol and some white sugar. Sweet, caramel flavor with a nice spice profile. Alcohol and fruits as well. Some bitterness in the finish. Warming, fizzy and full-bodied. Overall a nice beer, but the alcohol is a bit too evident, and it could use a little less carbonation. 091024
