This dark ale is fermented with a blend of two rustic Belgian yeast strains which gives the beer an up front farmhouse tartness followed by hints of coffee, dark chocolate, and black cherries. We aged the beer for over three months to give the yeast time to work its magic and let the flavors meld together. Listen to that lunatic in your head, dust off that vinyl, pour the beer into a glass and sip your way into a happy, chilled out groove.

dark sepia, Thin cream head with lacing. Light acetic berry draws grinds contrast with coffee nose, more chocolate but balanced. Berry vs chocolate flavor, cake-rich chalky texture through end. Lightly bitter, puffy.

On tap at Bangers & Lace Chicago. Pours black with a one finger stout-like head. Aroma is of rich burnt molasses. Flavor is sweet and spicy with complex fruity malt and medium mouthfeel. A little alcohol burn along with a slightly tart finish. Definitely tart for the style but in no way is this a "sour" beer. Quite good and interesting interpretation of the style.

Can. Pours black with a small dark brown head that fades quickly and collects at the edges. Leaves some lacing. Very interesting and unique aroma. Sour black cherries, anise, coffee, light cocoa, and light burnt oak. Wow, very cool unique taste. Packed with sour black cherries but complemented nicely with coffee, anise, and cocoa. Very long, tart, dry finish, lingering sour cherry taste. Medium body, a little sticky mouthfeel. Really enjoyed this beer. I have a feeling this is a love it or hate it kinda beer. I love it when brewers take chances like this and thatís why I keep buying Brewery Vivant beers.

Limited run can. Pours deep black. Nose is coffee and granny smith apples. Taste is immidiate coffee followed by sour cherries and chocolate and hoppy bitterness, chocolate, hay, barnyard. The soir character is perfect. Amazingly played Brewery Vivant!

Silphium (3176) - East Lansing, Michigan, USA - MAR 18, 2013
Draft at Taps 25, Lansing. Deep garnet body, thin tan head. Nose of molasses and chocolate; tart with woody undertones. The body is tart with leathery dark fruits, molasses, roast, chocolate wafers, and cocoa powder. Rather modest sour notes. Medium-bodied, somewhat sweet. Messy but interesting.

10oz pour at Emporium Arcade. Black with a small khaki head. Aroma is flowers, fruit, sweet grain and a bit vinous. Some tart liqourice and balsamic too. Taste is medium+ sweet, medum body, oily texture, with some soyness. Finish is long and flowery/spicy.

From the can. Delicious. A little fruity, right up front, then malty, chocolaty and a hint of coffee rounds it out. Kinda like a fruity stout. Pretty tasty.

16 oz. can. Dark black pour with a small tan head. Aroma of big belgian esters, strong dominant belgian yeast. Big chocolate, cherry and licorice notes. Touches of funk and over ripe fruit. Flavor is chocolate, cherry, slight tart yeast notes. Bits of coffee. Itís a touch sour. A bit funky. Slick, nice mouthfeel. Finishes somewhat bitter and salty. Iím feeling it.

UPDATED: MAR 16, 2013 Can: The aroma consists of chocolate, black licorice, light sour cherry, and roast. It pours a dark brown with some orange highlights a small brown head. Thereís some very thin webbing left on the sides of the glass. The flavor starts with a sweet chocolate. There are some light fruity notes in the background. The finish has light sour cherry and roast. Itís medium bodied with mild carbonation. Overall, itís rare that sour and roasty work for me in a beer.

End part of a 16oz can, thanks to tmoney99. Awesome name and label. Very dark but clear brown color. Light brown minimal bubbly head. Little dots of lace. Big nose.. Earthy, roasty, dark fruit (black cherry), spice and chocolate in the aroma. Tart, lightly sour taste. Sweet. Little bitter in the finish (the chocolate aroma is distinctly dark in variety, which I appreciate). Bigger body, light carbonation, light spicy bite in the finish. Little stout-like chewiness, also. Enjoyable, tart dark belgian stout.
