COMMERCIAL DESCRIPTION
This Shitake beer was created in collaboration with the 2013 Age Good Food Guide Chef of the year Michael Ryan. As part of the Sydney Beer Week, Michael was invited to create a beer that reflects his kitchen and cooking. He jumped at the chance to bring his Japanese influenced cuisine less than 500m down the road to our brewery. 10kg of dried Shitake mushrooms were included in the recipe of this otherwise basic Golden Ale. The mushrooms were included in the mash and the boil along with 5kg being used in a process we call dry shrooming.

Interesting beer. Tasted very much like a belgium like beer. Yeasty, cloves. And through for me. Subtle tastes and flavours. Enjoyable but not what I was expecting.

Tap. The umami was a bit subtle in this, I think it got a bit lost actually, but it’s still a nice enough beer.

Bottle from Plonk. Hazy pale yellow, thin, creamy white head, grainy/malty aromas, mild grassy hops, subtle mushroom flavour and aroma, slippery texture, medium body. An enjoyable beer, but one bottle in a session is plenty.

From a bottle. Pours cloudy pale yellow, thin white head, had a mild hops aroma with a different flair that could be the mushroom. Crisp flavours like a pale ale with some interesting touches. I was pleasantly surprised but won’t go out of my way to drink it again.

Slowbeer bottle (5-Jan-2013) Sweet funky citrus aroma. Tangy citrus spiced light malt flavour. Tangy spice pepper finish and citrus vegetable hop aftertaste.

Pours pale amber with a large head. Nose shows soft light malt, a little fruit and a faint mushroom broth note. Earthy flavours. Again there’s a little fruit and a very soft mushroom note. Finishes with a mild bitterness. Too much carbonation, body feels a little watery. Interesting stuff, but something I’d seek out again.

Bottle, 10C. Looks perfectly ordinary - just hazy gold with a modest white head. Aroma of hay, oranges, some peach, just a little earthiness that might well be mushrooms. And so it tastes. There’s a little more mushroom at the end where there’s gentle bitterness and lingering orange blossoms. Pleasant and quite refined but surprisingly a bit on the dull side.
