Commercial Description:
Chef Floyd Cardoz and brewmaster Garrett Oliver have combined their inspirations to bring you Brooklyn Cuvée de Cardoz. This golden wheat beer starts with a base of malted barley and unmalted wheat and then builds upon it a delicate balance of exotic spices selected by Chef Cardoz and then toasted and ground in the kitchens at Tabla. Ginger, tamarind, mace, black pepper, coriander, fennel, fenugreek, cinnamon, cloves, nutmeg, and chilies are added in the kettle, and then the beer is infused with toasted coconut after the fermentation. Combined with our yeast and light hopping, these spices give the beer a gentle, complex perfume, a full fruity palate, and long, drying finish with a very faint prickle of heat.

Draft… Lightly hazed, deep yellow ale with a small, creamy, white head. Fantastic retention. Notes of pale grains, fennel, clove, ripe banana and a sprig of mint ascend from the glass. Medium to full-bodied with a milky mouthfeel and lively carbonation. Sweet, spicy flavor provides way too much fennel and clove for my taste. Spicy, sweet finish. Way too much going on here – over spiced and too sugary.

Bottle (unlabeled Brooklyn 750mL). Aroma is unbelievably complex, led by a musky-fruitiness, notably pineapple and oranges. The spices are very much subdued but undeniably present. I can pick out clove, black pepper, coriander, and ginger. Pours a cloudy pale yellow with great lacing from a thin but steady white head. Flavor is balanced and enjoyable if less complex than expected from the nose. Fruit up front with spice interlaced, leading to a bone dry finish with strong notes of cinnamon and nutmeg.

Cloudy gold pour, whitish head. Damn bizarre aroma. Name the spice its there. Too much going on. Sweet spices, chiles, pepper...just odd. And I think the coconut addition was a mistake. Flavor is also weird as hell. Its a bit dry, spicy, tart, sweet...damn this stuff is all over the place. Friggin odd.

Tap at BCTC 09. Pours a slightly hazy golden with a fluffy white head. Aroma is earthy spicy- lemon zest, very fragrant, over-spiced, cardamon harshness, with some clean minty hints and ginger. Flavor is earthy spicy- pumpkin, nutmeg, vanilla, spicy- hot chillies, Indian-food like, anise and fennel-seed comes through a bit as well- ginger and grassy- almost wit-like at times, citrus, curry powder, leather and orange zest- weird, strange over spiced brew- not horrible, but it is somewhat hard to drink with all that spice going on.

(Draught) Pours a lightly hazy yellow body with a moderate white head. Aroma of ginger, tumeric, saffron, cumin, coriander, black pepper, and citrus. Flavor of citrus, cumin, pepper, tumeric, florals, yeast, and ginger. Think they threw the whole kitchen cupboard at this brew.

Cask Stillage from the Jug at the GABF, Colorado Convention Center 26/09/2009 Spiced floral aroma. White head. Clear golden coloured hoppy strong in alcohol and spicy cardomin and coriander flavours with a crisp and dry malt finish.

En fût. Verre de 12 oz dégusté chez Novare Res Bier Café (Portland, ME). Arôme: Très forte odeur d’épices avec une pointe d’houblons. Apparence: La couleur est blonde-orangée. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Très fort goût d’épices avec une pointe fruitée. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement huileuse. Moyenne effervescence en bouche. Arrière goût légèrement fruité. (Rating #2718)

GABF 2009, poured by the famous Mr. Oliver himself. Brilliant golden color with a lasting white head and some lacing. Aroma is sweet malt and loads of spices, with ginger standing out, along with some light fruit notes and perfume. Flavor is sweet pale malt, light bread, banana, orange, tamarind, and a complex array of spices: ginger, clove, coriander, pepper, and others. Body is medium and carbonation is fairly lively. All in all not outstanding but very solid and interesting.

Sampled at GABF. Golden yellow pour. Kind of spicey aroma. Flavor is belgian candy and spices. Always cool to try these one off types. Pretty good, I thought.
