Draft. Poured dark brown color with an average fizzy white head that was mostly lasting with good lacing. Moderate to heavy roasted yeast and alcohol aroma. Medium to full body with a smooth texture and flat carbonation. Medium to heavy toasted sweet flavor with a medium sweet finish of moderate duration. My expectations where exceeded.

11/12/2010: Brooklyn Cuvee Noire... Aroma: Interesting combination... Dry roasted malts, chocolate, spicy yeast, coffee, Triple-like characteristics, bubblegum. Appearance: Really nice pour into my new Brooklyn glass... Opaque, dark coffee-brown color with a dense, tan-colored head; fine carbonation bubbles. Flavor: Layered and complex... Dark chocolate blended with toasted malt and roasted grains; middle has banana, fruity esters, caramelized malt, and cocoa nibs with a bit of residual sweetness; dry, spicy finish with lingering notes of medium-roast coffee beans; alcohol content is mostly well-hidden. Palate: Medium-bodied; smooth and just a little just thinner than expected, but it makes it very easy to drink. Overall: Quite good; has the dryness and spice of Brooklyn Local 1, the dark fruitiness of Brooklyn Local 2, and the roasty coffee and chocolate characteristics from Black Chocolate Stout... It makes for an interesting and pleasing blend of flavors!

From "ghost" bottles at rrbf. This is Cuvee Elijah version (Cuvee noire aged for 4 months in Elijah Craig 12 year old oak casks, then 100% bottle conditioned. According to the database, it is not a new entry. I donít get it, but whatever.) pours dark brown/black with a small tan sudsy tan head. Nose is bourbon heavy, light roasted malts, cocoa, light coffee. Flavor is similar, bourbon character is heavy, donít notice much "Belgian" character from the yeast or otherwise, some nuttiness.

Pours pitch black with a mostly receding tan head. Notes of spice, pepper, toffee and tobacco. Medium bodied with lush carbonation.

Big White head, like an Irish dry stout, a little milky, roasty, and creamy. No Belgian qualities that I can taste. On tap at the 12 South Winter Warmer beer festival in Nashville, TN.

Bottle at The Diamond during the Brooklyn Ghost Bottles event. This beer was aged in Elijah Craig barrels - should this be a different beer than the regular Cuvee Noire? Anyway. Pours brown with a thick, beige head. Cocoa and burnt toast in the nose. Very sweet flavor, plenty of alcohol, a bit of wood and liquor. Full bodied with fine to average carbonation. Big warming finish, woody with hard alcohol, mild roast, slight earth. Heavy on the Elijah character, so if you like that, youíre on.

Pulled out at a beer dinner on the Biltmore Estate Thanks Garret Oliver
aroma of coconut, basement , leather, alcohol, banana, woody, coffee, toast. A nice ivory head poured in a wine glass.Lingering mouth coating the palate with dried fruit and warming effect of bourbon!!!! over all well balanced good beer

Draft. Pours dark brown, almost black with a small beige head. The aroma is roasted malts, chocolate, belgian yeast, and plums. The flavor has roasted malts, sweet Belgian sugars, yeast, chocolate, and dark fruit favoring plums. On the dry side with a mild bitterness at the finish.

This poured a dark brown color with a moderate white head. The aroma contains some caramel, spice, and chocolate. The flavor is rather malty with some alcohol presence. I taste some caramel, dark fruit, molasses and spices. Overall this was a nice beer!

Draft. Pours dark brown with a thin beige head. Light roasty and sweet malty aroma, with a hint of coffee and spicy yeasty notes. The flavor has roasted malt, light sweet caramel, dark fruits, and spicy yeasty notes. Good stuff.
