COMMERCIAL DESCRIPTION
Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

35,5 cl bottle at home. Pours pale golden with medium white head. Foam vanishes quite fast. Aroma: flowers, spruce, some citrus and a hint of roasted malts. Taste: low sweetness with high bitterness. A lot of hops. Notes of coriander and lime zest. Finish is dry-bitter. Palate: slick texture with lively carbonation. Longlasting finish.

750ml caged-cork bottle - decants a hazed pale straw color with a massive bone-white meringue cap. Citrusy aroma with gusty biscuit malts. Flavour starts with biscuit malts and a peppery edge but then the palate is floode with this lemon-dill discernment - goes to a spicy dry clean finish - bright sharp summery character - very refreshing - hides its higher alcohol content well for such a light spicy saison - top flight brew for savoring on a warm spring bistro patio with a grilled bay scallops

Tried in a bottle from Real Ale Store, Newark. Hazy golden colour with a thin white head. Aroma yeast and fruit. Taste hops spicy and light bitter.

Pours straw yellow, hazy. Mild particulate. Beautiful little beaded carb. Short white sudsy head. Nose of lemon grass, funk. candy sugar, yeast. Raw sour dough. Lots of lemony citrus and clean wheat malts. Yeasty. Has a tiny bit of toast in the back of the throat. It’s very minimally gritty. Notes of stewed sour plums, fresh grass and leafy herb and spice. Is there a bit of cilantro/coriander in here? Pithy grapefruit sorbet. Great substitute for champagne on a tasting menu. A really unassuming beer. Very stylish modern Saison.

Draft to taster. Looks solid; a milky/yeasty golden apricot with foamy white head. Smells of cutrus and tropical fruit hops alongside mild notes of saison yeast. Tastes like it smells, but yeastier, with a medium-bodied mouthfeel. Solid, but another turbid brew that’s very yeasty on the tongue.

Bottle. I think this one is a bit old. Big citrusy aroma with comes through in the flavor though this is quickly taken over by a soapy flavor and very sweet and cloying. It ends with a boozy flavor that I find unpleasant. This one’s not for me.
