Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

This pours clear and the color of golden rays of sunshine. It has a streaming effervescence and a tall creamy white head of foam that just won’t fall. Leaves a much of itself behind as lace and as a layer on top. Nose is delicate. Light malt, like a soft wind has brought the scent of grain. Light fruit sweetness and a little earth. A little funk and some lemongrass. The sweet zest of the lemon and a grassy herbal quality. There’s a touch of cracker int he nose and a little pear to add some sweetness.

Taste is superb. fresh, crisp, clean. delicate, feather light malt creates a supple mouthfeel. Flows so easily. The lemon is bright and light. the pear adds crispness and a little sweetness. It’s bone dry and thirst quenching. The sparkling carbonation adds to the lightness of the body and makes it drink even better. There’s a little soft white pepper in the finish and the after taste is just as delicate and just as flavorful as the first taste. It’s simplicity itself both on the nose and in the drink.

This beer evokes images of still life paintings, french meadows, rays of sunlight. It drinks easily and is enlivening and vivid. A terrific beer. Would pair easily with a variety of cheeses, light dishes and even with salads. Has a body and a palate that would compliment plenty of fresh and pungent herbs as this is so clean with only a very simple palate. Mild and gentle.

I was so excited to open this bottle. It’s a good beer, but did disappoint slightly. I think I served it too cold. Once I gave it 10 min. at room temperature to complexity of this beer opened up. The nose, citrus and lemon and palate, uber dry and wonderful carbonation stand out. Not my favourite Farmhouse, but not terrible either.

A: Light belgian musty. Citrusy. A: Looks...... light? like champagne. Light yellow color. T: Super dry. Super grassy. Lemon is in there for sure. P; Great on the palate. Very complex. Lemon. Dry. yeast hoppy. a tinge of malt. Overall the sum of the parts is definitely less than the whole. Nothing really is remarkable about this beer but in the end it bring something unique. The citrus note hidden under the super dry mouthfeel. A great beer to drink but maybe not to pick apart.

Yeasty, rich lemon pie and zest, some lemongrass. Hints of orange and sweet grapefruit. Some pepper. Very prickly but refined hop behaviour. A little tartness balances the modest sweetness. Abv well hidden.

Bottle from Vika enjoyed at home
Orange hazy, massive white head. Smells of spices, yeast esters, fruity notes, sorachi hops and the blue cheese i often find when sorachi ace is used. Moderate sweet, quite spicy, super fruity, not easy to identify fruit examples here. Moderate bitter finish, apple peel. Interesting saison, the sorachi ace takes this quite far away from the mainstream saison, and it works remarkably well

Bottle from Bruisin’ Ales aged at least a year - I tried this a couple days ago and found that it foams up heavily, but settles to a clear amber. Aroma has some nice lemon notes, which come through in the taste. Nice!

Nice estery notes, some spiciness. Slightly hazy light-medium golg color, with a long lasting, healthy white head. Spicy flavor mixing with wheat malt and medium bitterness. Effervescent. a sweet note in the middle, finishing dry.

Keg at Post Office Vaults, Birmingham. Dry, yes. Yellow and fizzy, but no head. Nice flavour of that hop what they are used and what the beer be named after. Slight sourness to finish, which it nice. Very refreshment. Yes?
