COMMERCIAL DESCRIPTION
Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

Bomber pours very hazy gold with a full frothy head. Aromas of chapagne grapes and sweet white wine also some bright citrus like lemon or slight tangerine and a lot of grape. Flavor is sweet but very crisp tastes alot like white wine. Body is light to medium with some alcohol warmth. Finishes like wine also. Good Beer but i feel like the sorachi hop tropical flavor is lost in the overwhelming wine/grape taste

Pours clear yellow with white head. Aroma is sugary lemon merengue pie like sweetness with some pale grain. The taste is similar with less sweetness and a dry nature. It is slightly dry and creamy, very easy to drink and enjoyable.

Ace pours a hazy straw color. The head on this one is huge. 3 fingers, fluffy, and pure white. Retention is great. Sticks around forever. Nice lacing throughout as you drink. Thereís a really nice and big smell going on here. The Sorachi Hops do itís thing. Lemon arises from the glass. Mixed in with citrus and grassy hops. The yeast gives off some spiciness. This smell is lovely and unique. Iíve never quite smelled a saison like this. Up front theres a small amount of funk going on here with the taste. The yeasty background comes in next with a nice spiciness. Then of course is the lemon, citrus, and grassy hops. Lemon just sits on the tongue in the end. Lovely. Mouthfeel is champagne dryness, crisp, and medium bodied. Nicely done.

Smells lemony -- looks golden wheaty with a thick, frothy head. A crisp, sparkling, sweet, lemony saison with a sliding bitter back end. Better than decent, but Iím not loving it. Not my favorite saison. Hoppy, spicy aftertaste. A bit like lemon Pledge.

The brown bomber bottle, with the corked and caged presentation was top notch. The beer itself appeared pale yellow and very cloudy. The aroma was grassy, lemony, and slightly floral. The taste was like biting into a crisp cracker. The hops were more prominent than most Saisons Iíve tasted, and they added a lemony, herbal, and mildly bitter flavors. The malt bill appeared to consist mostly of pale varieties, which added a simple sweetness. The yeast was not as interesting as other Saisons, and added some pepper like spice, but not much funk. A bit lighter in body than the typical Saison of today too. That being said, this was very refreshing beer to drink, with little holding you back from downing it quickly.

Golden hue with nice head and good lacing... Sunshine in a glass. Lemon citrus is noticable and nice.

UPDATED: APR 17, 2012 In bottle, thanks Dan. Pours a slightly hazy, light golden colour with a fair white head. Lovely saison aroma of white pepper, lemon zest, lavender and caramel. Similar white pepper, citrusy lemon, caramel and barley flavours. Moderate carbonation and a foamy mouth-feel. Very nice with a little soap and plenty of lingering lavender. Also had this on draught at The Southern Bar Opening. Poured a light golden colour with some blueberry and banana flavours coming through this time around. Moderate carbonation and CO2 prickle. Interesting. 7,4,6,4,17 (3.8).

UPDATED: MAY 22, 2012 Bottle with cgarvieuk and co, courtesy of FaithHealer1. Thank you! Hazy yellow, thin bubbly head fades to nothing. Lemon, lavender, slight pepper funk, maybe vanilla on the nose. Palate is some sherbet, big sorachi detergent character but not in a bad way, some saison lemon zestiness, funky sorachi lavender linger........ 7 3 8 4 17 3.9 Keg at Red Squirrel. Colder and fizzier. Slightly more bready, but maybe less funky. Soft lavender lemon flavours. Nice, but not quite as good as bottle in my opinion - I miss the funk. 7 3 7 4 17 3.8
