Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

Slightly hazy yellow, super thick head. Aroma is hops - lots of fresh hops along with "dark" spice. There’s a unique, bitter hops taste, some of which actually wants to remind me of some sake I’ve had, then an unpleasant alcohol feel followed by some better hops bitterness. The finish is very long lasting with a good bitterness to it.

Pours a pale golden color with a generous white foam head. Has an aroma of lemon zest, honey, apricot, spice, with hints of yeast. Has a light, slightly sweet start with a nice carbonation level, nice bitter layer, and a dry finish. Bitters are slight. Great mouthfeel. I think the honey is throwing it off a bit for me. There is something that is slightly off, but otherwise a nice saison.

750ml bottle at home with friends.

Appearance : Clear yellow with a big foamy head. Some lacing.
Aroma : Floral and herbal. Some hay and a bit rustic. Light tart and slightly spicy. Some citrusy hops also. Quite crisp and very fresh. WOW.
Taste : Yeasty and a bit dusty. Some fruits and a bit herbal and floral. Finish is yeasty and fruity with notes of honey. Carbonation is quite fizzy.
Overall : Got better as I was drinking it. Nose is just outstanding. Taste is also very good. Very light and refreshing overall. Very nice rustic nose with a slight tart touch. Outstanding stuff.

Bottle. Slightly cloudy yellow pour with a medium fizzy eggshell colored head. Aroma of faint citrus and pear with that familiar barnyard funk. Medium body with moderate carbonation. Taste of yeast, pepper and earthy hops with a faint barnyard finish. Lacked the distinct tangy dry finish of the style, but an enjoyable offering nonetheless.

750 bottle. Took off the cage and it opened itself...emphatically. Damn fine saison. Nice fresh aroma. Lemony. Hay. Super dry. Nice saison spiciness, but damn smooth. Nothing super special about this hop that I can tell from this beer anyway. Slight alcohol.

Bottle from bill. Pours with a fist sized white head. Yellow, slightly hazed colored liquid underneath. Nose of certain saison quality, with notes of white pepper, cardamon, lavender, citrus zest, straw, and a slightly chunky banana essence of a saison yeast strain. I like the nose. It’s nice. Flavors are nice and clean..body is somewhat firm and thick, but not syrupy or overly sweet by any means...just filling, so to speak. The yeast character drives the flavor the most in my opinion, showcasing tidbits of spicy characteristics here and there...a little underlying banana sweetness I suppose..pretty solid offering, actually. It doesn’t blow my mind with complexity or anything, but it is certainly a focused brew that knows what it is doing...good stuff.

750 ml bottle. Pours a clear, pale gold with a white head. Nose is of yeast, grass and lemon. Taste is the same as the nose with yeast, grass and lemon. Mouthfeel is dry and thin. So-so.

Caged and corked bomber received in trade. Golden straw-colored body with a crazy large head. Chilled nicely. A perfect brew for a summer’s eve. Spicy, yeasty aroma. Flavors of citrus, pepper and saison funkiness. Medium body with great carbonation. Finishes dry with spice and citrus. A very nice beer. Enjoyable.
