Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

75cl bottle from Cotteridge Wines.Loud pop on opening and poured a nearly clear bright gold colour.Very large frothy white head which soon shrank to small but lasting head.Lively carbonation throughout.Fruity and hoppy aroma with some hints of spice.Lemon zest aroma very much in evidence from beginning to end.Lemon also strongly featured in the flavour along with other citrus fruits.Subtle spices also there in amongst a background of Belgian yeast and a little malt.Different style of saison to the norm but still very refreshing and enjoyable and well worth introducing to your palate.

Draft in a wine glass Quite flowery, much more than from the bottle, hay, grass, bread, and citrus. Slightly cloudy sparkly yellow, with a long lasting white head. Sweet and flowery.

UPDATED: APR 15, 2013 Poured draught at Manchester Pub in NYC. Pours slightly cloudy with barely any head. Taste is hoppy with lots of citrus and some floral notes. Enjoyable, but I was expecting more..

Bottle at sampling session. From notes (Oct. 8, 2011). Nice hops in nose, also some interesting things: paint thinner or varnish and cocoa butter. Sweet and buttery flavors, more coconuts, and some citrus. Very good and long smooth finish. Very good stuff.

Golden pour with hardly any head. Mouth is medium. Taste is full of tropical fruit. Sweet at first but finished bitter. Aroma is a little muted. Slightly spicy. The alcohol in this was really well hidden.

On tap at the Knick. Fresh grassy hop aroma with light grainy notes. A very distinctive nose on this with mild sweetness. Medium golden clear with white thin foamy lacing head. Medium body with medium-high carbonation. Medium sweet start with fresh oranges and orange peel. Oaky with mild vanilla. Spicy herbal hop note with light bitter finish and bitter sweet after. Smooth saison with nice flavors.

750ml bottle. Mostly orange amber with a generous off white head that settles with some spice evident on the top. Saki, spice, grass, bit of spice and slight funk, bit of citrus hops. and an odd combination of oak, vanilla, orange zest and yeast - something unique in a saison. Sweet and fruity, becomes quite tropical, bit of an alcohol hit, low carbonation on the palate even though there is a lot as it comes out of the bottle.

Bottle. Ar- lemon, dill, damp earth. Ap- bright golden color with a thin white head. T- dill, cucumber, lemon zest, pepper, Belgian yeast. Mf- medium body, high carbonation, dry finish.
