COMMERCIAL DESCRIPTION
Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

Complex hay, bubblegum, tangerine, sherbert nose. Slightly hazy blonde. Open fluffy head. Mellow, bit of brett, pineapple, sweet. Long moreish finish.

Bottle. Nice head with excellent duration. Color is hazy golden. Aroma and taste are earthy hops, yeast, fruits, citrus and malt.

Bottle from Systembolaget. The typical dill smell that Sorachi gives, also some yeast. The tast has more dill in it and it leans towards crawfish (like the ones we have in Sweden), kind of funky dill taste also with a hint of plastic. I personally don’t think Sorachi hops works in beer, it could be my heritage but to me it taste like someone spilled the juice from a box of crawfish in my beer. Out of 5 samples 4 where poured out, I was the only one who finished my beer. It’s unfortunate since besides the hops it felt like a solid beer.

Flavor: sweet lemony flavor, lemongrass gives it a fresh crisp character, plenty of spicyness, long bitterness follows the spicyness

UPDATED: JUL 14, 2013 Bottle-date unknown-Pours very lite orange with a 1 inch foamy/fizzy white head with tons of carbonation rising to the top. I really want to like the nose here however, it comes across too much as lemon scented cleaner/air freshner. Lemon all over the place like pledge. flavors are very similar-lemon drop, band aid and a lite bready flavor. man, this could have been good if they used a more wild yeast strain that would have melded well with these stupid Sorachi Ace hops. I really dont like this hop variety at all. With all of this said, Brooklyn did a very fine job of bottle quality, corking and clean-ness of this beer. Most beers i have from this brewery are butter bombs (minus their awesome stout) but not here-definately top-notch in terms of making a beer thats not infected. long finish of cleaner. I really had high intentions of this being alot better and wish it was. however, keep up the good quality control Brooklyn and make more interesting beers.

22-12-11 Bouteille: Couleur jaune-dorée, trouble avec une effervescence moyenne et petit collet de mousse. Arômes légers de citron avec une touche d’houblon. Saveurs légères de citron et d’houblon frais avec une moyenne amertume. Trop houblonnée pour une saison. Corps léger avec une texture plutôt mince et une moyenne carbonisation. Finale légèrement amer.

Beautifuly cloudy pale golden Saison wearing an everlasting white sticky sheet. Intensely phenolic on the nose, almost rubbery in fact, but even moreso spicy, perhaps clovey, peppery, vanilla-like and particularly bubblegum like. Interesting yeast strain, although it does not feel very farm like, with little earthiness. Very fun hop aroma though, I truly dig the exotic fruit and citrus flavours of Sorachi Ace hops. The combination of exotic hops and phenolic yeast makes for an original and appealing example, to me. In mouth, I would have expected more dryness, but the hops are there indeed, doing a great fruity job while soft minerality adds complexity and the pils malts remains lean and in an appropriate support function. Pretty good, but not as intriguing as the aroma. Carbonation is plentiful, albeit not as large-bubbled as the best examples. Plenty of qualities and risk-taking makes for a great new world interpretation.
