Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

750ml bottle, honey gold color, with a bubbly white head, nice floral tropical fruit, leafy, grassy hoppy nose with some good lychee, mango, rambutan, pineapple, pear esters from the belgian yeast, with a light honey pale, toasted malt accent, with a faint lemongrass, zesty champagne spritzy note in the aroma follows through on a medium-bodied palate with a nice fruity yeastiness, a good flowery tropical fruit, leafy, grassy sorachi ace hop character, with a mild spicy lemongrass, lemon pepper, lime, lemon peel, green grapefruit, herbal flavours, with light doughy, lemon pie undertone, leading towards a tropical fruit, citrus peel hop bittering finish.

Bottle sample. Clear golden color with a small white head. Aroma of lime, vanilla, lemongrass and black pepper. Citrusy flavors with slight tartness and low bitterness. Oily, dry, medium body, interesting.

UPDATED: SEP 30, 2012 Pleasant, comforting aroma of honey-lemon, coriander, lemongrass, orange peel, floral hops, and yeast, with a bit of molasses in the background. The mouthfeel is medium to light, with a wheaty feel to it and adequate effervescence that doesn’t get in the way. The taste is mellow and very refreshing, with the above-mentioned notes resulting in an excellent interplay of citrusy bitterness and herbal sweetness. I’ll be sure to revisit this brew.

On tap at Eiderdown. Pours deep golden with small white head. Little lacing, medium body, medium carbonation, and spicy aroma. Taste is slightly spicy citrus. Pretty good.

Hazy appearance, good start for a saison. Funky aroma and flavor, but a light palate, with notes that strike me as a little vegetal. Not a saison that I enjoyed very much. (bottle at Ale Jail beer festival, September 2012)

Bottle from Cotteridge Wines; A USA brewery with a Japanese hop producing a Belgium Farmhouse ale quite a mix there. Pours a golden yellow with a small white head, decent carbonation. A floral spicy taste with a hint of Hubba Bubba. I like this best Saison i’ve tried.

Lemon aroma, cloudy medium bodied Saison with a light bitterness with flavors of pineapple and citrus. Well constructed offering from Brooklyn. Sweetness is just right, hops flow well with the yeast strain.

Bottle from Brass CIty Brew Fest. Pours a golden body with a white head that provides nice lacing. What makes this saison stand out from others is its sorachi spiciness. The spiciness provides a kick that pairs nicely with its smooth and creamy mouthfeel.

a light aroma with grain and some light spice and apple. the flavor disappoints a bit. Not what you expect from a saison. mild and creamy with light spice and an odd bitterness. the finish is light with a bit of spice. It has all the makings of something good it just doesn’t do exactly what a saison should.
