Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

Tap @ Rattle ní Hum. Pours a hazy gold color with a medium-sized white head and a little bit of lacing. Aroma is earthy notes, Belgian yeast, slight citrus, spice (coriander?), and a little bit of hops. Taste is Belgian yeast, citrus, and spice up front, dissolving into earthy notes and a strong, unique hop bitterness at the end (Iím guessing thatís what Sorachi hops taste like). Deceptively smooth, more bitter than many saisons, but it works. It just works. Fabulous job.

Served on tap at rattle n hum with ThorTheViking. An execellent representation of the style. Light, fluffy, tart, and somewhat acidic. I was pleasntly surprised by this one. Some hay notes coupled with Belgian spice. Pours yellow with fluffy white head. Slightly hazy in appearance

Snifter @ Tylerís Apex. Good aroma, sweet. Citrus, lemon. Peach, powdered sugar, herbal. Golden orange color, good head and lace. Bitter sweet flavor, lemon with other subtle fruits, little soapy, spiced. Lite body, smooth creamy mouthfeel, bitter dry finish. Nice brew very drinkable. Better cold, lost a little as it warmed. The first sniff seemed to have the most about it, but had enough all the way through to make it worth while.

On tap in the Mews Tavern RI. Poured a pale lemon juice haze. Foam head with a smattering of lacing. Aroma of yeast and nutmeg. Palate was odd, watery and grassy.

Cloudy yellow, thin white head. Odd metallic smell, with some spicy, herbal notes. Flavor is also very nice - clean and crisp, with some citrus and some nice yeasty notes, as well. Odd beer, but tasty...

Draft at wholefoods fairfax. Pours hazy yellow with a slight hue of green and a thin white head. Aroma is Earthy lemon grass. Mouthful is crisp with big lemon zest and that earthiness in the background. Verry enjoyable display of the japanese hop!

mini-growler from riversideak; super cloudy, pale yellow with trace white head; sharp, hoppy nose mixed with lemons and stale malt; drinkable, but has a sharp bite to it either from the soriachi or perhaps star anise; quite fruity, but lacking those yeast/spice characteristics; doesnít quite come together for a complete beer; interesting though

The hop aroma in this is just wild, like a super sappy pine and citrus explosion. The flavor, however, is not nearly as hoppy as it smells and it is a pretty well balanced brew. Would have guessed a lower ABV.

The Sorachi wasnít one of my favorite Saison beers, but it was enjoyable nonetheless. The beer poured a bright golden color with a huge white head that left a minimal amount of lacing around the glass. The nose was interesting, with notes of spices, coriander and black pepper. The flavors were spritzy and bubbly, with notes of bread, yeast, raspberry, orange peel, lemon and grapes. The finish is quite active, with more of spritzy and overly-carbonated feel. This wasnít one of my favorite Saison-style beers.

On tap at Leons. The best gastropub in town. Except I donít like to use a term that is so overused these days. Anyways, the beer, pour is a beautiful hazy yellow with a big white head. A nice hop profile here. This is definitely more about the hops than the spice. A grassy, floral sort of hop. The first sip takes you to a nice malt profile and body with a touch of some lemon citrus. The aroma and finish is where this beer makes its money. The hops are well placed and balance the spice and malt nicely. Would grab this again and drink it all night.
