Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

Bottle. Light golden, hazy, average and mostly diminishing head. Moderate, malty - some wheat and sweetish aroma, lots of floral fruitiness with lemon and citrus hoppyness, faint spiciness. Body is medium malty - some wheat and sweetish flavor, fruitiness and with lemon and citrus hoppyness, some spiciness. Finish is average, malty - some wheat and lightly sweetish, fruitiness and with lemon and citrus hoppyness, some spiciness. Nice floral - fruity hoppuness, but much wheat in the flavor/finish considering the body and hoppyness.

Poured from a 750 into a small snifter. Huge lively head, some lacing. Cloudy golden with very active carbonation. Aroma is extremely complex. Lemon dish soap, lemon candy, saison yeast, peach, apricot, licorice, barnyard bretty funk, and as it warms more subtleties reveal themselves. The flavor is also very complex. Grassy, earthy, mineral, banana, lots of lemon, black pepper, and a dry, hoppy finish with a crackery quality. Excellent saison.

pours cloudy, pale golden. bubbly off white one finger head. A persistent line of bubbles coming from the center of my goblet. She looks tasty. Floral, typical Saison yeast notes, banana, lemon zest, citrus esters, earthy, grass hues on the nose. Really balanced on nuanced. Phenolic esters, mineral notes, coriander and pepper on the back end, cracker malts profile. the more you sip you more you find. Light and fluffy on the palate. Dry, quick bitter finish that is refreshing. Thanks to John M for picking up a case to split with Dad.

Bottle. Pours golden hue with a long lasting, white head. Aroma is of heffe like fruit, yeast and spices. Medium, smooth body. Taste is spicy hops and cooked vegetables. I did not really enjoyed this brew.

Pours a golden cloudy yellow with big off white head. Aroma of barnyard, lemon, grass, sweet spice and some funk yeast. Taste about knocked me over. This style hasn’t won me over until now. Thank you Sorachi Ace. There is spice, funky yeast, but not over over powering. Nice earthiness, orange and lemon zest. There also is a nice dryness about it that makes me want at least 2 more 750s. Super refreshing and just a damn fine beer. Wow.

Bottle from Wegman’s. Pours a cloudy off whit with some head and little lacing. Nose is lemon rind and sorachi hops first sip is balanced but I think it is a bit too floral. Clean finish with nice lingering hop profile.

Bottle shared at the September iteration of the Santa Cruz tasting series. Pours a hazy bronze color with a nice white head. Flowery fruity hoppiness on the nose with some lemon and grass. Some honeyed malt comes through as well as some phenols, maybe a bit too much of the latter. Grassy flavor with mild esters, lemon, honey, and a crackery finish. A little sweet; a bit drier and this could be great. Right now it’s pretty good.

Serving glass: Poured from bottle into Tulip. Appearance: Hazy straw color with foamy billowing head and some sticky lacing. Aroma: Very hoppy aroma with with lemon and pepper. Some light clove and banana. Taste: Same as the aroma, this is a very dry, hoppy Saison. The lemon notes are quite strong and overpower the bready malts. Ends with a moderate spicy bitterness, with notes of pepper, clove and lingering lemon tartness. Palate: High carbonation, fairly light body, extremely dry finish. Champagne-like. Overall: Very unique due to the lemony Sorachi Ace hops. Great Saison overall, which once again proves that Brooklyn can nail the look and mouthfeel of Belgian beers.

Bottle from SL. Pour was golden with a decent initial head, some cloudiness in the body. The aroma was sorachi hops (tropical, coconut, rice, not sure how I describe this), belgian yeastiness, fruits, floral. The flavor was right along with that, some breadiness coming through along with additional spicing in addition to the base phenolic elements from the yeast. Mouthfeel was moderate body, perhaps broken up by the significant and nicely done carbonation. A nice nice brew.

Pours a mostly transparent gold with a fairly big, white, foamy head. Nose is a bit funky (and good), with touches of wheat and coriander. Flavor is rich, funky, and earthy, with hints of strawberry, bread, spice, and impotent hops. Excellent saison quality. Finish is quick and of light bread. I am impressed with this saison.
