Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

Bottle. Pours hazy yellow with small white head. Aroma is very floral and herbal. Taste is also very floral and hoppy, with some fruits and dill. At first I didn’t like it at all, but after a few sips I really started liking it. Very interesting and good beer!

Brooklyn Sorachi Ace is tasty enough to make you wonder why Sorachi Ace beers aren’t more common. Brooklyn makes it look easy, but the hop varietal is known to be tricky. This Saison captures all the nuances of the cone, yet still seems like a cohesive, well-rounded Farmhouse Ale. Bright champagne esters, earthy Belgian funk, and spiciness on the nose. Hop flavors of grass, lemon, lime, subtle onion and dill. Bready malt flavors that conjure a rustic country loaf. Fruity white wine characteristics. Dry and just slightly sour. It’s totally refreshing by itself and I can imagine it would be superb with the right meal.

Pullo @ Alko.

07/10/16. Brooklyn event at Wine Rack, West Byfleet. Sour yeasty aroma, sweetness too. Bright gold, with a big bright white head. Bitter. A sour kick. Pleasent mouthfeel, with a warming sensation. Dry finish. Herbs and lemons.

Clear golden yellow beer with smallish head on top. Aroma has herbs, dill, spices, some yeast and some hops. Taste has herbs, quite bitter hops with dill and grassy flavours. Medium body and high carbonation. Sorachi Ace is a really weird hop.

Clear yellow colour and a foamy white head, looks very bubbly. Light aroma with hops and some citrus fruit. Taste is hoppy and bitter, dry finish with some saison yeast flavour. Medium body, soft mouthfeel and light carbonation. It’s a nice saison overall.

750ml bottle that spent slightly more than a year in the cellar. Pours a hazy light gold with a white creamy head that almost looks like it came out of a nitro tap. On the nose, an amazing floral lychee fruit note with black pepper, some citrusy/resinous undertones, and some light Belgian Triple-esque wet concrete notes...but wow, that lychee!!! As for taste the lychee notes are RIGHT THERE, with light sweetness, and then lighter notes of black pepper, wet concrete, a tiny hint of fresh dill, and some light tropical fruit notes that fades out into spicier, yeast heavier notes with lots of citrus in the finish. This is a totally unique beer (which may be from the year in the cellar), with a flavour profile I have yet to encounter. I love it! I would 100% buy it again.
