COMMERCIAL DESCRIPTION
Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

750ml brown bottle, corked. Golden in colour, hazy. Fully formed thick and billowy cap. Leaves a good amount of foamy sheet lacing on the sides of the glass. Aroma has a nice attack of spicy hops up front, strong herbal notes, grassy, some lemon and orange sweetness. Flavour is herbal, spicy and grassy with lemon peel. Clean and dry finish. Hoppy and herbal aftertaste. Medium body, smooth mouthfeel, tight beaded carbonation. Nice presentation from the bottle to the glass. Very drinkable, I am an instant fan of this hop. One of my favourite beers I tried in 2010.

Keg at Bottle Shop Bermondsy. Clear orange, slightly sparkling, no real head. Aroma - potent apple, wheat, lemon. Body is medium, carbonation is spritzy, smooth. Taste - wheaty, pine, urinal cake (in a sort of good way), touch of lemon. Very fruity, fresh beer. Stupendously drinkable. Good use of sorachi ace.

Rated on 9-25-2011 (Corked and caged bottle) The appearance is a medium sized fizzy white head that mostly diminishes, hazy pale yellow body, fizzy, fast rising carbonation observed, and no lacing. The aroma is malt, grassy, floral hops, sweet, fruity, and zesty. The taste is sweet, grassy, floral hops, malt, some spice, and zesty. The mouthfeel is lively and this beer is medium bodied. Overall, a nice tasting saison and worth trying.

750ml large champagne corked bottle. Pale haze gold beer with a huge white head and lots of fizz inside. Nose is yeasty, winey (grapes) and breads. Maybe a little light cheese note in the nose. In the mouth, it’s full and bready. Lots of doughy tastes, freshly cooked, crusty bread. There is a champagne quality here too - the grapeyness isn’t as pronounced as in the nose, but it’s there - the yeast is fresh and winey here though. It tastes "classy" and the mouthfeel is splendid. Sip sip sip and sip some more. Doesn’t taste like a 7.6, but DOES taste a bit like a wine. It’s wonderfully confusing, and I’m going to enjoy it. Finish is piney, bready and long...

Bottle. Pours a clear yellow gold body with a fluffy white head that left lots of sticky lacing. The nose is really nice, very light and delicate maltiness under a beautiful fruity and juicy hoppiness. The aroma is so good on this that I think I could just smell this beer all night and be satisfied. The hops are just as bright and fruity on the flavor as the aroma. A really nice mix of mango and passion fruit flavors coming from the hops. The malt is still light, delicate, and soft, staying in the background and letting the hops do all the talking. Not a ton of influence from the yeast, but I think that this is supposed to be all about the hops anyway. Light bodied and very airy with very fine fizzy carbonation. Lingering earthy and fruity finish. Pretty delicious stuff, I love the hops in here and the lack of spicing.

Taster on tap at Ei8ht Ball. Totally hazy kind of darker amber orange color. Good thin off-white head. Leaves good, thicker lace. Kind of caramely, light pine, light spice. Some apricot. More malt-forward at this point, but still some nice sorachi hop character to it. Some white grape, good interesting kind of grassy light bit of hop to it. Hint of lemon. Medium to bigger body. Smooth, kind of soft, lighter carbonation. Lightly slick texture, goes towards more dry in the finish. Some good light belgian yeast character. Not as hoppy as I expected, but maybe this is how it’s supposed to be? As a mildly hoppy belgian ale, it’s pretty solid and complex. Enjoyed it more than I expected to, considering I haven’t seen Sorachi Ace in a while and I’m assuming it’s an older keg.

Nice pillowy head! Very pale color, lively carbonation. Lots of lemon, wood and yeast in the smell. Sour taste, with hints of lemongrass and ginger. Very citrusy.

The nose is apricots, then the Sorachi-hops citrus notes appear when warming to its natural drinking temperature. Tastewise, it sets off with apricots and lemons, quickly the taste gets carried away by a massive gush of tingling carbonation, and not enough body to keep the flavours from dissolving. And there’s something metallic that I hope is just due to the harsh and unbecoming conditions of transportation. In the end: a very light but lingering bitterness that leaves the mouth a little too dry in the end.
