Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

UPDATED: FEB 15, 2015 750ml bottle poured into shaker pint. Gushing foamy white head towers over clear yellow liquid. Some lacing is left after it settles. Aroma is of lemons, lemongrass, hay, grass, white pepper, spice, and cracker. Taste follows with the lemon flavors dominating and cracker-dry malts coming on the finish. A light body that?s inflated by the foamy mouth-filling foam, crisp and slightly creamy texture, highly carbonated, dry finish.

Pours light yellow with medium head. Aroma: very interesting aroma of sorachi ace hops (coconut?) coupled with citrus. Taste: the coconut taste is also present, some biscuits and a nice hoppy aftertaste. Very original and super drinkable

Very bubbly light straw color with a popcorn colored, lasting/regenerating head. Pale malts, citric blossoms, eucalyptus, passion fruit and other tropical and exotic spices. Quite sweet, with wheat and light caramel in the front. Very light and airy on the palate. Interesting mix of citrus, pine and spice. Light bitter and acidic mingle. A saison with wit tendencies. 8/10

Yellow, hazy, very thin head, low carbonation, loads of powdery sediments floating around. Aroma is grassy, floral and spicy. Mouth feel is bitter and carbonated, long bitter after taste. Flavours are spice, lime zest, grass and loads of SA hops.

12 oz bottle, best by September 2016. Pours golden, filled with fine to medium particles, and a white head. Aroma is skunked at first, but then more of a lemony citrus, wild mint. Pale malty flavor mixing with pear, herbal flavors (like that wild mint), white grape, with a touch of the skunkiness still hanging in there. Pretty good other than the problems caused by the age/storage (skunking and appearance). I think I would really like a fresh bottle were one to be found.

Bottle from Pivoteka, Zagreb. Shared with Marko. Clear light yellow, medium white head. Citrus, bubblegum, light smoky, stinging yeasty. Dry and spicy, medium carbonation. Medium carbonation, long dry finish, resembling a Champagne. Drinkable. Innovative take on the saison style, interesting.

Fruity nose with some citrus and floral notes and some barnyard yeast. Hazy yellow pour with moderate white foam. Crisp on the tongue with very active carbonation and very dry finish. The flavor balances the hops and the yeast well. The dryness is very surprising. The alcohol is noticeable but does not seem like it’s over 7%. If I were blindfolded, I might not have identified it as a saison, but after having it in several different places, it makes perfect sense.
