Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but featuring rare Sorachi Ace hop.Fermented with our special Belgian ale strain, we add Sorachi Ace hops post-fermentation. After 100% bottle re-fermentation with Champagne yeast, the beer emerges with a bright spicy lemon zest aroma. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes and fresh cheeses.

Really pleasant and unique. Fruity esters and spicy aroma. Subdued golden coloring with plenty of effervescence. Dry and light mouthfeel that left a sharp impression. Almost a palate-cleansing effect. Dry fruits and peppery from what appeared to be a low final gravity. Hops presence was really well blended and strong but not harsh. Really interesting.

This beautiful, smooth saison fills the mouth with mild spices & green tea. The champagne yeast makes this taste like the queen of beers. Light & refreshing yet subtly complex. Rated by BrewTom

Bue en bouteille de 75cl, couleur blonde effervescence moyenne mais une mousse très très intense qui continue même à monter dans le verre ( trop de levures ?) bière très agréable très rafraichissante le côté Sorachi casse complètement l’idée de la saison avec un côté très vanillé ultra agréable, peut être un peu écœurante à cause de ça pour une saison.

Huge foamy white head that dissipates slowly. A bit on the light side in terms of flavors. Pear, apple and pepper are evident but a touch disappointing relative to the cost.

Bottle has been in my beer cellar for almost a year. Golden color, slight hazy, fluffy two finger head. Yeasty lemon nose, a little bit of citrus hops, hay. Well carbonated, continous bubbles. Taste of yeasty lemon, grapefruit, then some kind of sweetness. The finish has a bitter, dry and clean finish with yeast. Thanks Ed.

Bottle, 75cL. Home. A golden pale yellow beer with a huge thin white head. Good persistence. Beautiful lacing. Fruity aroma (tropical fruits, lemon), herbs, resin. Medium refreshing bitter. Light body, medium silky texture, average to lively carbonation, dry bitter finish. Overall, I enjoyed this one : really fruity, nice bitterness and palate.

Pours a slightly hazy pale golden with one finger of white head, good persistence and moderate spotty lacing. Nose is dusty funk and citrus with some malt. Taste is dusty and bitter, caramel malt, with a bitter and floral aftertaste. Medium body, moderate to low carbonation. Not my cup of tea. I’ve had Sorachi hops before, and had the same reaction. Musty and dry, without much malt.

Pours a hazy gold with full head and lots of carbonation. Aromas of lemon, dill, light honey, and melons. Flavors are similar with a bit of white pepper and a light bitter finish. Fresh and clean. Very nice.
