Formerly known as "The Tonic"
We spend a lot of time with our pals in the cocktail world, and they are constantly putting new flavor combinations in front of us. One of my favorites is a Scotch-based cocktail called The Penicillin. Invented by bartender Sam Ross at Sasha Petraske’s famous NYC cocktail bar Milk & Honey, the Pencillin is an instant classic. It combines peaty Scotch, ginger-infused honey, and lemon juice. It’s an improbable blend, but it’s delicious, and it’s also the inspiration for our next Brewmaster’s Reserve beer, The Tonic. The government wouldn’t let us call the beer “Penicillin”, we’re afraid. But friends, between you and us, this brand new Tonic will cure many of your ills. Now take your Tonic and text us tomorrow.

Barcade, Philadelphia tap ($6): Pours a copper/brown colour with a small head. Aroma is like tea and herbs and ginger and stuff. Taste reminds me a little bit of DFH Sahtea. Kind of soda like taste. Tea-like quality with a hit of ginger. Kind of weird. Some lemony quality. Not terrible.

Tap at BP Dupont Circle. Unfiltered orange-tan. Steady white head. Straight up fruity ginger beer, sweet, not sharp or bitter. Lemon juice, dulled out, not so great. Very ginger dominate. Drinkable, but not impressive.

Very unique. Nice pour, interesting taste and aroma with the peat and malt. The lemon/lemongrass/honey is very present. For what it is, it does a good job. A unique, ambitious beer and good for Brooklyn for making a beer that resembles a mixed drink.

On draught at Barley Hopsters. The beer pours a clear golden-orange color with a medium off-white head that recedes steadily. Partial rings of lacing on the glass. Aroma of smoked malt and tropical fruit. Medium body with a peat and smoke character with notes of bready malt, lemon verbena and herbs. The finish is fruity with a charred wood aftertaste. Good flavors independently but they don’t work very well together. Barely average overall.

On tap at Akkurat during Brooklyn tap takeover, April 27, 2012. Slightly hazy golden with a medium, creamy white head. This was indeed a special one. A lot of lime both in the aroma and taste, also ginger and notes smoke. Ice cubes, perhaps?

Draught @ Akkurat. Unique brew, this one... The texture reminds me of soda, altough the taste is quite complex yet in balance. Notes of smoke, orange and preserved fruits. A bit dry. Kind of reminds me of the traditional finnish drink "sima".

Draught at Akkurat. Pours golden with a white head. Taste of canned citrus fruits (tangerines), hint of smoke and the same sweetness as in rauch biers. A fun brew that tastes a lot lik grapefruit tonic drink mixer.

Draught at Akkurat, Stockholm. Hazy golden, mid sized head. Heavy on ginger and lemon. Sweet with medium-full body and rounded mouthfeel. Orange peels and ginger marmelade. Low bitterness. Manages to retain balance with all the spices.

Draft. Pours orange with a white head. Pretty sure they hit the nail on the head with what they were trying to do. Ginger, lemon, and peat smoked malts. The smoked malt is more evident in the flavor. Really weird, but hey, I like weird.

A strange brew. No pun intended. Neat unfiltered appearance, with head retention, but a confusing armoa of fruits and yeasty/citrus (as strange at it sounds). Taste is bitter sweet sour fruity, with more sweetness as it warms up. Very confusing and not particularly balanced. Finish is relatively clean, but this is a beer that just didn’t grab me at all.
