COMMERCIAL DESCRIPTION
Formerly known as "The Tonic"
We spend a lot of time with our pals in the cocktail world, and they are constantly putting new flavor combinations in front of us. One of my favorites is a Scotch-based cocktail called The Penicillin. Invented by bartender Sam Ross at Sasha Petraske’s famous NYC cocktail bar Milk & Honey, the Pencillin is an instant classic. It combines peaty Scotch, ginger-infused honey, and lemon juice. It’s an improbable blend, but it’s delicious, and it’s also the inspiration for our next Brewmaster’s Reserve beer, The Tonic. The government wouldn’t let us call the beer “Penicillin”, we’re afraid. But friends, between you and us, this brand new Tonic will cure many of your ills. Now take your Tonic and text us tomorrow.

Smells earthy, slightly like poop. Very medicinal flavor with thick sweet mouthfeel...maybe from the honey. Very strange stuff. Couldn’t picture drinking a full pint of it.

Sweet ginger aroma. Cloudy orange color with a small white head. Sweet and medicine bitter flavor that lasts into the finish.

Sample at Brew Kettle on 10/7/11. Clear amber pour with a medium off-white head. Smoky aroma with some spice and citrus. Sweet malt and honey flavor, followed by a smoky and spicy finish. Interesting concept, but not something I enjoy drinking all that much.

Serving glass: Poured from tap into small glass. Appearance: Hazy honey gold with thick white head and light lacing. Aroma: Lemon, ginger, smoke and an odd medicinal cast. Taste: Very medicinal, with ginger, peat and lemon. Interesting, odd and slightly unpleasant. Yet I keep sipping. Whatever. Palate: Moderate carbonation, medium body, odd finish. Overall: A strange but ultimately failed experiment. I really wanted to like this more.

Tasted in April, 2011 on draft at Local Option. Pours hazy golden, with a very thick white head, that leaves thin, even lace after a slow recession. The nose is ginger, lemon-lime citrus, honey, and some lightly spicy notes. The flavor is honey, ginger, and citrus, with lightly spicy and bitter flavors on the back of the palate. The body is full and oily with average, but very smooth carbonation, and a long ginger and honey finish.

The aroma is like a lhoney-lemon lausenger. Hazed golden in color with white head. The aroma follows through with a ginger finish; very refreshing and unique.

Draft at Capone’s. Pours turbid orange with off-white head. Nose is caramel malt, a spice medley, and hops. Tastes very spicy, hoppy, with caramel malt, and clove and ginger seeming to be the spices that stand out the most. Not a technically great beer, butg big points for ballsiness, and a beer everyone should try at least once.

This beer was the big standout for me at GABF ’11. Heads and shoulders above anything else I had in its uniqueness and complexity. Really challenging and mystifying. Smoke and some very subtle belgian yeast notes on the nose (even though they use champagne yeast), along with some honey. Some herbally green flavors like an agricole rum. Very spicy which I now realize is ginger but couldn’t pin down. Some flashes of orange peel on the taste. A singular, awesome experience.

Draft. Creamy white head, lightly hazed amber body. Aroma is moderately sweet, caramel, alcohol, some honey, light ginger/cardamom. Taste is moderately sweet, cotton candy, some molasses, light alcohol burn. Sticky medium-full body.
