My Bottom Line:
Lengthy toasted pale cereals and herbal hops coalesce in this amenable Belgian-style Ale, adding honeyed sweetness and earthy tones throughout.

Further Personal Perceptions:
-A veil of foam floats atop the cloudy yet shiny golden amber.
-These organic cereals (Frontenac, surely?) are quite green at times, but as in some Trois Mousquetaires, they pair admirably well with noble hop varieties.
-Some fruity esters recall apricots or peaches.
-This is as drinkable as it is flavorful.
-Light spiciness is perceived in the nose, contributing to the fruity touch.
-Are there really smoked malts in there, or am I hallucinating?

Bu sur place le 17 mars 2009, en fut (20 oz). Cuivrée miel mi brumeuse, peu de collet. Arome végétal, houblon très peu amère mais un peu parfumé. Goût d’hoblon qui commance végétal, mais il y a des notes de fleures fruités, avec une finission amère de céréal. O.K. mais je ne suis toujour pas convincu sur les bières bios!

Slight hazy amber-orange hue, with a white head, leaving some belgian laces, yeasty, fruity nose with a nice floral hop leafy, zesty citrusy, lemony accent, with some peachy, apricot, faint marmalade esters, with an earthy toasty, caramel malt aroma follows through on a medium-bodied palate with a yeasty, fruity, peachy, orange peel, spritzy, zesty, character with a smoky, ashen hint, with an earthy biscuity, toasty malt note, and a nice flowery hop citrusy, lemony, grassy, leafiness, leading towards a fruity, peachy, citrus hop bitterness finish.
