In 750ml bottle. Pours a hazy dark copper with hints of ruby, capped by a thin ring of light beige head. Aroma is rich an complex, picking up notes of banana, candied fruits, and brown sugar, with some interesting cinnamon and bourbon-like undertones. They really managed to capture and preserve the earthy and woody character of the maple syrup, and it is accompanied very well by a unique blend of caramel malts and rich fruitiness. Carbonation is on the low side, and helps to lend a slightly syrupy feel on the palate. This is great stuff! I am sure this beer could benefit and further develop with a long cellaring time.

Draft: Poured a dark brown color ale with a large foamy head with good retention and some good lacing. Aroma consists of candi sugar with light lingering sweetness and nice caramel malt. Taste is a nice mix between some caramelized Belgian malt with nice notes of lingering sweetness though maple syrup is not easily discernable. Body is quite full with good carbonation and no apparent alcohol. Interesting and quite good though not the best form this brewer.

on tap at broue ha ha. pours murky brown with decent head. dark malts and fruits, really sweet fruits. ther’s an off-maple that disturbs my tastebuds, tastes artificial too me. don’t fully have the belgian yeast aspect - yeast profile seems rather flat than complex. did not appreciate that much.

Bomber from May 2010. A healthy beige foam covers the hazy dark chesnut body. Estery fruit puree (banana, plums and pears) meets stew-like spiciness (cardamom, white pepper and cloves) in this idiosyncratic aroma. In mouth, the foamy, almost expanding carbonation feels authentic. Pretty characterful yeast, yet confidently malty through its cakey, pudding chocolate and maple kisses. The active and convincing carbonation manages to clean up the sweetness, leaving the finish toasty, earthy, spicy and agreeable. Good stuff, well integrated elements and no dominating ingredient. My Bottom Line:
Ripe banana and pear purée quickly moves into raisiny sweetness, peppery hops and alcohol warmth before sealing this Dubbel with an earthy kiss.
Further Personal Perceptions:
-A sheet of foam slowly sinks into the cloudy brownish red.
-A mineral touch accompanies the fruit purée in the nose.
-The aroma doesn’t exactly announce the complexity to come in the flavor profile.
-The body is well dried out and the prickly effervescence brings this into easy drinking territory, for those used to the style, anyway.
-This is a complex, evolving, yeast-driven brew. Well-done!
-Maple syrup is so well integrated that it barely shows up alongside the raisiny sweetness and the wooden alcohol. This is not your typical overly sweet maple-flavored ale.

Drank at Brouhaha’s second anniversary (6/4/2010), on tap (12 oz). Caramel brown, little head. Sweet aroma of malted barley maple, slightly spicy. Fruity sour taste of maple, crudest barley, a kind of bitterness that is out of the ordinary. This is far from being too sweet!
