Brassée par Brunehaut depuis 1890, l’abbaye de Saint Martin triple a le titre reconnu de bière d’Abbaye. La recette, retranscrite et transmise au travers les années par les moines, aurait survecu à la destruction de l’abbaye Saint Martin de Tournai lors de la révolution de 1793. Gage des bons rapport que la brasserie entretient avec l’église, en 2001, elle reçoit l’approbation du chanoine Jean Dumoulin, archiviste et conservateur de la cathédrale de Tournai, d’utiliser une représentation d’un vitrail de la cathédrale sur l’étiquette. En verre, la bière est splendide. De couleur blond-doré et d’une effervescence marquée, elle est remarquablement surplombée d’une mousse majestueuse et de très bonne tenue d’une épaisseur d’ 1,5 cm environ. Au nez, le citron et le malt prédominent avec des flaveurs très fraîches La dégustation laisse en premier lieu découvrir des arômes de malt et de pin. La première attaque se fait toute en finesse. L’amertume apparaît ensuite, puissante, mais peu corpulente. L’impression qui prédomine est malheureusuement celle d’un déséquilibre notable dans les goûts, entre l’amertume tirant sur les agrumes, la présence de l’alcool trop marquée et une pointe épicée. L’ensemble manque d’hamonie et l’attaque est trop rude. Le final, plutôt sec se porte quant à lui une nouvelle fois sur l’alcool et encore de façon trop marquée. En conclusion, l’abbaye de Saint Martin triple n’est pas dénuée d’intérêt et notamment au travers de son aspect superbe et de son amertume, intéressante, mais le manque d’équilibre global et de maîtrise de l’alcool lui font notablement défaut.

Robe bonde, reflets dorés, mousse peu persistante. Nez fruité, pointe de levures, caramel, légère note maltée, céréales. Bouche à l’attaque fraîche, belle bulle mais milieu de bouche un peu creux et finale abrupte. Une triple assez basique.

Cloudy, golden color with a diminished off-white head. A steady flow of tine bubbles still observed thorough the haze. Sweet aromas of light caramel, honey, orange blossoms, stewed light fruit in a light alcohol and some herbal bits. Seems simple and sweet. Smooth, zippy and a touch biting in feel. Sweet ripe light fruit in the front. Light caramel and alcohol kick in and carry this one to the finish line. Hot and lacking balance. 7/10

This bottled brew from a bottle shop poured a medium sized head of foamy finely sized white colored bubbles that were long lasting and left behind a hazy weak yellow brown colored body and a thick foamy lacing. The weak aroma was musty. The vinous mouth feel was tingly at the start and at the finish with a mellow sweet aftertaste. The ok flavor contained notes of semi-sweet mild hops candy mild astringency malt and bread dough. An OK brew just nothing special.

Feb. ’16. A 0.33 l bottle that poured hazy yellow body with a huge head atop. Fine orange peel, sugar, some alcohol and maybe coriander aroma. Flavor was lightly bitter, chalky, orange, pepper, with other hops and spices. Alcohol was lightly felt as a tingling, but didn’t bother. Medium bodied with moderately long bitter orange and herbal/spicy finish. More grainy and alcoholic here than in flavor. A bit dusty, too, with an occasional touch of tobacco at the very end. A bit more hoppy tripel than usual, also quite alcoholic. Far from that it couldn’t be better, but fine anyway.

Clear blond to orange beer, small creamy white head, little stable, bit adhesive. Aroma: very malty, grains, bit sweet, some yeast, banana. MF: ok carbon, medium body. Taste: very malty, grains, banana, bit sweet, very yeasty, ripe banana, soft bitterness. Aftertaste: banana, grains, sweet, yeast, more banana.

Mooi goudblond licht troebel bier met volle witte schuimkraag. Bloemig in de neus, ook toffee. Lichte caramel, kruidig, appelsienschil, licht bittere warme afdronk. Goeie degelijke tripel.

Pours clear amber, very big white head. Smell is grainy. Taste is sharp, bit bitter, dry, somewhat metallic in its maltyness. Way to high carbo. Rather thin mouthfeel. Bit hollow overall.
