11.2 ounce bottle into chalice, bottle date of 5/2011 notched. Pours hazy golden amber color with a nice 1-2 finger dense off white head with great retention that reduces to a nice cap that lingers. Spotty lacing on the glass, and plenty of carbonation streaming up retaining a nice head. Aromas of big lemon, apricot, citrus, pepper, biscuit, banana, tart grains, and yeast spices. Decent aromas with good strength and balance. Taste of lemon, biscuit, clove, citrus, grass, apricot, tart grain, pepper, candi sugar, and yeast spices. Lingering notes of pepper, biscuit, citrus, tart grain, and yeast spices on the finish for a bit. A little to grainy for my liking, but still well balanced. Medium carbonation and body; with a fairly creamy and slightly slick mouthfeel as expected for the style. Alcohol is well hidden with only a slight warming on the finish. Smooth to drink for 9%, but is still a bit of a sipper. Overall a very solid and balanced tripel. A bit too much tart grainy breadiness, but I still enjoyed it.

Used a tulip for this one. Pours a murky pale golden color with a super thick bubbly white head. Aroma has a citrus scent up front, there’s a slight grape hint also. In the background I can get the yeast, spice, coriander, and a little pine. It’s kind of a little bit on the weaker side though. As for the flavors involved here, I can pick out some coriander, clove, yeast, grain, grapes, dough, and barley. Leaves a yeast and coriander finish. This one is a little light, but not too bad. A good beginner tripel.
