We set out to craft a beer that could only be made in Houston - something that couldn’t be replicated anywhere else on the planet, even in a laboratory We smoked our malt at Beaver’s, Goode Company and Rockwell’s Tavern up in Cypress, and blended those malts as the base for a strong scotch ale. Houston’s BBQ scene is literally infused in the malt of this beer.

Caramel notes, smooth and sweet, the smokiness is in the finish. A fine Scotch ale, one of the better beers of that style that I’ve had.

Pours murky reddish orange with a small tan ring. Smells mildly smokey and hints of caramel. Taste is sweet, a little hint of bitterness, caramel, smoke. Medium-bodied with a smooth texture and soft mouth-carbonation, Buffalo Bayou Smoke on the Bayou finishes with a lingering sweetness.

Clear deep Amber with a fast fading head. Nice nose with some sweet earthy caramalt and gentle smokiness with a touch of sweet boozy ester, and slight candi sugar notes. Big sweet flavor with berries and candi sugar and a bit of earthy sweet booziness. There’s a slight berry and citrus flavor with some gentle winter mulled spices.

Rated based on notes taken 8 Oct 2012 -- Drank in Austin. I didn’t write down many notes, but I rated this really high.

Tap @ Hay Merchant. Scotch Ale, eh? Perhaps not so coincidentally was thinking the smokiness was quite peaty while drinking it. Is "The Islay Malt of Beers" taken?

22oz waxed bottle poured. Pours a dark thick reddish amber. Low clarity. Aroma is sweeter and boozier but still has a leafy earthy soil Scottish aroma. Flavor is less sweet and less boozy which is better. Goes great with a slightly thicker mouthful. A nice long soil and bitter brown malts aftertaste.

On tap at Xmas in July. Pours a cloudy amber with a small beige head leaving spotty lacing. The aroma is caramel butterscotch and smoke. Thin moutfheel with a sweet caramel malt and light smokiness on the finish. Easy to drink hiding alcohol well a very impressive scotch ale from Buffalo Bayou.

Tap at the Saucer Downtown Houston. Dark brown with a resilient beige head. Caramel, dark fruit, bread, and very light smoke aroma. Sweet and with relatively well concealed booziness, but again, almost no smoke character whatsoever. Full bodied, lightly dry and boozy, oily. Good Scotch, and I agree that this belongs here, and not in the smoked category.

Bottle, smell of toffee and earth, appearance is dark brown, taste of light toffee and caramel which disappears quickly. You would never know this is a 9% beer
