Originally, the farmhouse brewers of Wallonia would produce a weak Saison beer for the workers and a stronger beer to be aged & sometimes blended – destined for the local taverns. This beer has a primary fermentation with a Saison yeast, then undergoes a secondary fermentation with a blend of Lactobacillus & Brettanomyces. The result is tart, crisp, slightly sour & incredibly refreshing.

Tap at In de Wildeman. Hazy light golden with white head. Lots of saison yeast, light funk, lemon, dry bitter herbs, dried lemon peep. Medium bitter, light sour and very light sweetness. Medium bodied.

From tap at In De Wildeman, Amsterdam, Carnivale Brettanomyces 2016. Aroma is floral, berries, spicy notes, yeast, slight herbal notes. Flavour is light to moderate bitter with a dry finish. Body is medium. Good smoothness and drinkability, very tasty ’herbal floral garden’ saison.

On bottle from Vinmonopolet Aker Brygge. Hazy pale golden color, good foam. Medium aroma intensity; floral, fruity, some stable and a little funky. Medium body & complexity. Good bitterness and balance with light sourness. Very enjoyable

Messy with a copper base, all hazed out of coursem big white head. Smell of fruity yeast esters, clove and cardemomme, herbal tendensies, hay and light malts. Moderate sweet, a funky touch, hints of acids and tart fruits, nice combo, then fruity yeast esters blended with nice spicy notes, nice malts and a bretty twist. Moderate bitter, grassy tail. Very good

Goud helder bier met een goede witte schuim kraag. Ruikt zuur, fruitig, droog, boerderij. Smaakt zurig, zoet, kruidig, bloemen, banaan.

Keg @ Victorian Craft Beer Café, Halifax. Hazy pale peach coloured with a carbonation and a thin head. Dry, not too thin tasting, but does feel weak, although still identifiable within its style. There’s a little more fruit to be found in its nose than taste, these are fairly soft.

Keg at Spit/Fire. Pours cloudy yellow-gold. Aromas of apples, soor plooms, cereals. Tart and dry, a little bit spicy on the palate.

330ml bottle, pours murky brown gold with a small head. Aroma is woody with zesty lime and caramel, spicy and yeasty, nice and complex. Light medium body, texture is oily with soft carbonation. Finish is nicely balanced with light bitterness and light sourness. Tasty.
