COMMERCIAL DESCRIPTION
Originally, the farmhouse brewers of Wallonia would produce a weak Saison beer for the workers and a stronger beer to be aged & sometimes blended – destined for the local taverns. This beer has a primary fermentation with a Saison yeast, then undergoes a secondary fermentation with a blend of Lactobacillus & Brettanomyces. The result is tart, crisp, slightly sour & incredibly refreshing.

Pale, slightly hazy yellow beer with a thin head. Smells tangy, with fruit and a grassiness to it. Flavour is initially quite mellow but that tanginess comes into it again, with a sort of bready, apple-y flavour kicking in. It’s very spicy and yeasty, almost like a sort of apple pudding.

Bottle from Cornelius. Pours a slightly hazy, light gold. Lovely summer aroma. Sweet hay. Grassy. Light farmyard funk. Biscuity. Lemon puffs. Looked a bit flat in the glass but has a decent amount of carbonation. Creamy palate. Quite Tart. Decent amount of sweetness to back that up. Fruity tang. Lemon juice acidity. Cracker-like dryness. Light to medium bitterness. Really complex and flavourful beer. Lovely stuff!
