Originally, the farmhouse brewers of Wallonia would produce a weak Saison beer for the workers and a stronger beer to be aged & sometimes blended – destined for the local taverns. This beer has a primary fermentation with a Saison yeast, then undergoes a secondary fermentation with a blend of Lactobacillus & Brettanomyces. The result is tart, crisp, slightly sour & incredibly refreshing.

Keg at the bottle shop tap takeover. Lovely looking bright golden yellow / straw coloured pour with a huge frothy white head. Aroma is big classic saison yeast, citrus lemon, straw, little funk. Flavour is crisp straw, pils grains , citrus, straw, saison yeast, lemon. Nice classic solid saison. Palate is crisp and grainy, highish carbonation. Good stuff.

(Draught at Craft Beer Co Covent Garden, London, 26 Apr 2015) Golden colour, slightly hazy, with frothy white head. Fruity, sourish nose with notes of citrus, green grapes and lemon. Fruity, spicy taste with citrus, peaches, green grapes, apples and a slightly tart finish with hints of yeast and a fairly low bitterness. Medium body, with a certain sweetness. More of a tick than a in depth rating... On tap @ tilquin beer festival. I felt this was the best saison I had at the event. A hazy straw colour with a small head. Fruity barley nose, hints of earthy funk. Slightly acidic, flowery, funky yet very drinkable saison. Long and dry aftertaste. Refreshing and well made.
