This is a sweet beer with a pleasant flavour of hops. Indeed, for Bush de Noel, the brewer uses a traditional process which consists in placing hops flowers in the vats where the beer rests for four to six weeks by which time it will have reached full maturity, giving it a very distinctive taste. In the U.S the label generally reads Scaldis Noel.

The cognac character gets even stronger when taking a sip of this winter warmer of pure blood. The alcohol is the major taste component and dominates all the others. But its not going to create an undrinkable beer - no, its giving it a wonderful warming character accompanied by brown sugars, toffee and a slight sour hint. The hops give a descent bitter note that sticks together with the malt sweetness long afetr the last sip. Today it snowed nearly the whole day long - what a great beer is this to accompany such a white, cold evening!

Bottle from de Bierschuur in Poppel. The beer has a dark ruby red color and a pretty small head, with perfect CO2 level. The aroma is malty, little alcoholic and pretty sweet with tones of dark fruits and caramel. The taste is pretty sweet with rich caramel flavour and dark fruits, to change into a nice bitterness from the roasted malts. The finish is warming and a little alcoholic. A little to strong for me, but there are better Christmas beers.

11.2oz bottle pours brown cloudy and slightly thick with minimal head. Excellent malty sweet aroma. Malty brown ale fades into a slight hop note and into more malty caramel, toffee and subtle nuttiness. Delicious and complex. The 12% ABV is undetectable. Drank on Christmas

2000 bottle, so aged about 14 years? Dark nutty brown with a nice earthy sweet boozy nose of toffee and Belgian candy sugar and plum. Rich flavor of amazing Belgian dark biscuit and chocolate and toffee and rich earthy sweet nuances. Amazing. Theres a lovely bit of sweet toffe and dates and raisins and biscuity sweetness. Mmmmmmm
