A unique interpretation of the wit style. It’s a hazy lemon yellow colour. The aroma smells strongly of rosemary with some subtle lemon smells mixed in. Flavor wise, there’s lots of spice... specifically corriander, and more rosemary. There’s some grapefrity citrus in there as well, but not really as much as I would have liked. I also got the distinct flavor of stuffing, as in the kind you’d have with a roast chicken or turkey. Very unusual, and not as bad as it sounds. Finishes sour-dough bready and dry. It’s a wit that requires slower drinking to appreciate all the flavors. I’d definitely drink it again, just to see what other flavors I could pick up.

Pours a pale yellow colour like straw, with a big frothy white head that dissipates and it is slightly hazy. Aroma is of honey, spruce hops, light citrus notes and some slight grain malts. Taste is quite sweet but mixes well with the hops and honey to create a unique but pleasing flavour. Lively carbonation, light body and thin mouth feel. Overall a very good summer beer.

2010 edition, bottle. Pours a very nice looking straw color with a lasting white head. Very hazy looking body. Aromas of honey and fresh thistle bushes. Some coconut in there too I think. Taste is very crisp and clean. Plenty of honey and more coconut. Very refreshing. Fairly full bodied for a wit. Very well balanced, nice level of carbonation. Long thistle like aftertaste with hints of honey. This is the best batch in years.

A hazy yellowish color with nice white head that diminishes quickly. Light citrus nose, with cool, clean start, and a crisp finish that develops in complexity between sips. A great hot day beer, very refreshing, and light alcohol.

A hazy peach, with a big froth that calmed down to form a crown of white lace. Szechuan and lemon pepper gave it a citrus and spicy nose, with the added fruityness of orange peel. Very enjoyable. The bustling carbonation really brought out the mix of flavors well. Coriander, even a little citrus basil, along with tangerines and curacao. Body was just perfect for me, it had a bit more roundness and body than a lot of Wits I’ve had before. I really liked it.

Bright but hazy yellow colour with a thick frothy, fizzy, and rocky but mostly diminishing white head. Great citrus, flowery, banana, and lightly spicy aroma. Floral and herbal flavours plus a lightly fruity, bitter, and phenolic finish. Light to medium bodied and refreshing palate. A fascinating and contemplative beer. Thanks Dave.

Refreshing orange coriander. Other citrus flavors - complex. Carbonation on high side, aggressive. Good wheat beer, good summer choice. Medium mouthfeel. Pale yellow

UPDATED: OCT 21, 2004 Outstanding Dave. This is a very different wit than any I’ve had. The colour is a hazy but very bright yellow and the nose is flowery and citrusy. The flavour and mouthfeel are just like the aroma. I got lemon and flowers in the taste. This is an excellent wit.

Pours very hazy yellow, lots of carbonation and big white head. Tons of grapefruit and lemon in the aroma, very inviting. Taste in a very smooth mixture of more grapefruit and spice. Body is very assertive, more than I expected. Clean finish, flavours become more evident as it warms (they’re a bit muted when first sipped). A unique experience that I would be happy to do again, thanks Rudge75.
