COMMERCIAL DESCRIPTION Bottle conditioned "Methode Normande" cider. The Brown Snout, Dabinett and Yarlington Mill apples for this bottle-conditioned dry cider are gathered by hand. A slow steady fermentation in cool conditions is essential and so the fruit is not pressed until December. Wild yeasts ensure the full complexity and rich flavours of the apples develop and the fermentation is finished in the bottle producing a naturally sparkling cider.
