Fraxinus Maximus, in keeping with the Cahaba theme, Fraxinus is named after the Genus of the Ash tree which is a common species along our beautiful Cahaba River. Fraxinus is an amazing Double IPA. By using a technique called Hop Bursting, we are able to create a beer that has 120 calculated IBUís. However youíll find it is anything but bitter, Fraxinus is a well balanced Double IPA with a solid malt backbone and complex hop aromas.

Pours clear copper-golden with a thin but serviceable buff head. Aroma features a strong note of Sony hops with fruity and malty undernotes. Hoppy flavor has resiny and evergreen wood notes but little bitterness, and citrus, pomme and fresh malt in the background. Mouthfeel delivers scent fizz and body. Maximus drinkus!

Dish soap and a bit of harsh hop. Tangy on the tongue. bitterness is very strong aroma is citrus flesh overall not to bad. But you better be IPA approved.

Draft, pours clear copper with frothy white head. Aroma of caramel, grapefruit, nut, raspberry, hint of alcohol. Taste of caramel, cereal, grapefruit, medium body with bitter finish.

Tap at the brewery. Pours clear orange with a large, creamy off-white head, medium retention with good lacing. Aroma is biscuit and honey malt, earthy, pine, and citrus hops with pear esters and mango notes. Flavor is heavy hops and bitterness with light malt, fruity esters, and a sweet finish. Full body and medium carbonation.

Draft from Hop City. Pours a smooth slightly opaque orange color. Foamy whit head that dissipates quickly but has good lacing. Great aroma with citrus, hops, and slight malt. Has that thicker mouthfeel that you expect from a DIPA. Flavor is balance just about right. Hops, citrus notes, and almost just the right amount of malt. Not my favorite DIPA, but it is close. ---Rated via Beer Buddy for iPhone

Tap. Pours light clear golden amber, medium white head, good lacing. Aroma is citrus, pine resin, denim. Flavor is the same, light sweet, medium bitter.light body. Quite nice, actually.

On tap at Hop City. Pours golden, small white head. Immediate aroma of citrus, grapefruit, very floral. Taste is smooth, floral, lightly bitter. Bitter aftertaste. This is a good local beer overall. ---Rated via Beer Buddy for iPhone

UPDATED: JAN 14, 2014 Draft. Copper color with medium white head and nice lacing. Citrus and pine hop aroma. Medium body with resin and citrus hop flavor with a bit of a soapy finish.-- Same overall score as before but more raspberries on the aroma and I didnít get a soapy finish this time. A decent IPA

UPDATED: APR 14, 2013 Draft in the taproom. Poured pale gold with a smallish off-white head. Aroma was orange, grapefruit, caramel, some pine. Flavor was lots of orange and grapefruit, almost sort of tang-like. Kind of murky and soapy. Some nice caramel, but it seemed to me that it needed either more malt backbone or a cleaner-tasting hop. Alcohol was hidden pretty well. Medium mouthfeel. Had a version of this on draft yesterday at J Clyde -- Frax Max with "mystery fruit," which turned out to be apricot. I liked it a whole lot more than the plain version. The flavor was deeper and cleaner. The sweetness from the apricot worked well with the grapefruity, bitter hops. Iíd drink this regularly. In this version: Ar: 7; Ap: 3; T: 7; P: 4; O: 14 = 3.5.
