Fourth stop during Wisconsin Trip #2 and one of 11 brews offered at this small town brewpub. Pours an opaque brown brew with an off white head. Nice lacing. Aromas picked up are dark chocolate, dark pitted fruits, and toasted barley malt. Taste is quite different from most other Imperial Stouts. This Imperial Stout has a sweet and acidic wine aftertaste. Something more like a wild yeast giving it a metallic vinegar texture to the palate.

Calumet is known and lauded for their mastery of diacetyl and this one is the king of that sour tartness that is unique to these guys. Deep opaque blackness with a rich espresso head. Tart and creamy at the same time. Do not taste alcohol, and I imagine it is in the low end for the stye (say around 9%). Really well balanced except for the sourness. I really have had no other beer like this one. I only counted off some points for the style....it is a very nice beer and very unique....it helps that you can only get it in Chilton.

An imperial stout without the hops. Tart, syrupy sweet flavor that seems to stem from the black malt. Oddly dry finish. This stuff is way too unbalanced for me.

Pours to a dark black body with a thick creamy dark brown head. This comes off more as a cream stout because he doesn’t use a ton of hops in it. Milky at first and then the dark roasted chocolate malts hit. VERY SWEET. So sweet that drinking a glass of this would be MORE than enough. Light tartness to it. Mostly milk- and bittersweet chocolates. The aroma has a light roasty and smoky characteristic. Dark pitted fruits hide. The palate is overly sweet. Very slick and almost vinegary in texture.
