COMMERCIAL DESCRIPTION
Formerly known as Winter Ale.
Our Winter seasonal beer is here! Originally brewed in September of 1992 at the request of three bartenders/managers (who have since gone on to great fame and glory) Big Man Ale has been a favorite seasonal brew at Cambridge Brewing Company ever since. Legend has it that the grist weight of Big Man Ale was their combined total weight – 770 pounds of malt! Deep copper-colored and unfiltered (as are all of CBC’s beers), it boasts a full body complemented by strong, robust flavors. Its rich notes of malt and caramel are offset by very aggressive hopping—it is kettle-hopped with Columbus, Cascade and Centennial hops and further dry-hopped with even more Cascades and Amarillo. These hop varieties lend a fruity, citrusy character to this big malty beer, vaguely in the style of a strong stock ale or I.P.A. We just call it the Big Man.

On tap at the brewpub. Pours a clear red with a small white rim that leaves no lacing. Nose is of fruits, resin and light caramel. Taste is of caramel, cereals and fruits and not too bitter. Body is medium and carbonation light. Mouthfeel is a little sticky. Overall this was OK but not much more, a run-of-the-mill IPA.

On tap @ Cambridge Brewing Co.

Appearance: Slightly hazy mahogany with a small white head and little lacing.

Aroma: Spices and caramel are dominating along toasted malts, resinous notes, citrus and berries notes.

Taste: Caramel forward with toasted malt, spices, a bit of resin and moderate bitterness.

Palate: Medium body. Medium carbonation. A bit oily mouthfeel. Lingering spicy finish with caramel notes.

Overall: A Christmas IPA? Not sure I like this take on the style at all.

On tap on the premise. Pours mahogany with very low off-white head. No lacing. Aroma is of citrus, citronella, some malt, caramel, resin, pine. Taste is of very nice citronella, pine, malt (slightly roasted), sugar. Palate: Medium body. Very soft carbonation. Slightly sticky on the lips. Somewhat heavy. Overall: Not bad, nice hop features. Maybe just slightly too heavy on malt.

on tap on the premises. unclear very dark golden, mahogany tint, with a reviving off-white cap, some lacing. spicy C’s, fairly fruity - berries, smooth grainy-peppery toasted maltiness, lots of citrus and melons, pepper. average carbonation, light body - oily; semi-sweet and grassy-herbal-spicy finish. pretty nice balanced red ipa.

On tap at the brewpub. Clear copper pour with thin ring of white foam. Aroma is malty, lots of sweet caramel malty notes, old school amber/red IPA, light pine. Taste is resinous, hoppy, pretty solid toasty malt backbone, some spice. Decent, not really my style.

Bottle. Poured dark amber, cloudy, huge beige head and tons of lacing on the glass. Aroma of fruits, malts combined with some hops. Flavor is malty as well, some bitterness from hops and some fruit. Very decent IPA; certainly enjoyable.

Nose of roasted malts and citrus hops. Medium body. Flavor is tropical fruit and lots of citrus like hops Bitter finish. Good solid beer.

22oz bottle. Pours a dark copper with a thin white creamy head leaving tons of lacing. Nice flowery hop aroma. Tons of pine and earthy malt flavors. More malt and less citrus notes than a typical IPA but really well balanced and tasty.
