COMMERCIAL DESCRIPTION
Our Saisonnaire grisette was brewed several months ago and a portion enjoyed on tap as an end-of-summer refresher. A complex grist of organic pilsner and wheat malts, organic oats, rye, and buckwheat all contributed to the fresh grainy flavors, balanced by Spalt and Hallertauer hops. Now it has been reborn from chrysalis to butterfly, as the remainder has been refermenting and aging over three months with two unique strains of Brettanomyces. A mere 100 gallons of this beer was inoculated with Brettanomyces bruxellensis drei and Brettanomyces custercianus, which lend incredible citrus fruit and tropical fruit notes of pineapple, guava, and passionfruit as well as green apple flavors to this very dry, slightly tart ale. Amazingly complex, well-carbonated, and still light and bright and very drinkable, we look forward to more limited-release expressions from these two lovely little yeasts. OG: 1.044 FG: 1.004 ABV: 5.25%

On tap at the brewpub. Aroma is a gamey wet grain. Ugh. This has some dry, thin, goaty grain flavors that I can’t get over. Is it cleanliness? I don’t know but every beer I put my lips to here has off flavors. This one isovaleric hops, wet dog grain, and oxidation. I want to say this is awesome, but my resistance to that tape-like ethyl acetate Brett is getting in the way. I just couldn’t see drinking a glass of this.

On tap at Cambridge Brewing. Pours hazy gold into a snifter. Bright white head with good retention recedes leaving thin sheet lacing. Lemon and marshmallow funk aromas. Dry with tart tropical fruit turning to sweet and funky marshmallow in the lasting finish.
